Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2Â tbsp cocoa or cacao powder
- 2Â tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

These were just amazing. Absolutely delicious. My family and I LOVE them, and we keep a batch on hand at all times so we can have a healthy (delicious) snack when running out the door to games/church/whatever. They taste like fudge! Hard to believe they are healthy. Also, I haven’t had any trouble rolling mine into balls. Thank you SO MUCH for this recipe. It’s already one of my all-time favorites.
I used macadamia nuts instead, doubled the batch, but instead of double dates, I used glace cherries for the double. Delicious!
I just tried these, used dessicated coconut, organic pitted dates, a combo of unsalted cashews and pistachios, and at first I thought they were going to be way too dry. Once I smooshed the dough in the plastic bag, though, the sticky dates started bringing it all together. But then I wondered why you recommended using a plastic bag to make it less messy, and then didn’t give any advice on how not to look like a tar baby from having dough glommed onto your fingertips and palms when rolling into balls! I solved my own problem, though, about half-way through, and thought I would post for any other readers who don’t think ahead – I smeared my hands with coconut butter, most of which absorbs into your grateful skin anyway, so I don’t think it adds any measureable amount of oil to the balls and of course the coconut flavor blends right in. Unlike flour or olive oil – the two things you use to keep bread dough from sticking to your hands. I’m looking forward to trying ALL the other flavors, too. btw, if you look on the chocolate bar, it’s actually called German’s chocolate not German chocolate 🙂
These were yummy! However, according to my nutrition counter at sparkpeople, these bad boys weigh in at 100 calories a ball (about the size of a cotton ball) WITHOUT the nuts. Glad I made a half batch cause I sure gobbled all three down in not time flat! 🙂
I have some dried apricots in the fridge. Think I can sub those for the dates? Can’t wait to try these!

Oh my, these are soooooo great! My whole family loves them! And that’s pretty good, since my brother’s not big on chocolate. My Grandpa really likes them, which is another big plus. In fact, we’re going to buy more dates now so we can make more tomorrow! We did change one ingredient, and that was the cocoa. We subbed carob for it. That’s what we’ve been doing for your recipes, using carob. It’s slightly different from cocoa, but just as good, in my opinion… and I love chocolate, so…
We really, really enjoy your website, and are so grateful that we found it, and love that your recipes are sooo simple! Me double times, since – like I said – I love chocolate. 🙂

mmmmmm i tried these and they were heavenly! although i only made a half batch i only got 3 balls (they were the size of a bouncy ball) i should have gotton atleast 5 right? hmmm i guess i just made them big. so mine were 100 cal a ball with thiugh is high cal they were still super yummy, filling, AND satisfying. did i mention they were YUMMY? cals arent really a vad thing tj
though, you need them to live.
