Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2 tbsp cocoa or cacao powder
- 2 tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

I made these but they don’t stick together even though I used Sun-Maid like you said 🙁 Any suggestion on what I can do to make them stick? They are sooo delicious!
Put into a plastic bag and smush into a ball in the bag. Then take out of the bag and roll into balls :).

Can I substitute the pitted dates with something else? I’m not a big fan of dates or raisins!

These are great 🙂 I dipped them in a tiiiiiny bit of melted dark chocolate for the boyfriend. Great even for those who don’t like dates – can hardly taste them.
I made these today and they taste EXCELLENT!!!! I did add a few chocolate chips and recommend that if you do this, to use the mini-chips. The balls didn’t form so easy for me (I didn’t have a food processor) so I simply stuck the mixture in the microwave for approx. 20 seconds. That did the trick!

just made these, took me mayby 10min and they are divine !!!!
These are fantastic! I have lots of food sensitivities and these fulfill my chocolate and protein cravings perfectly! Even my kids eat them, which is rare for “healthy” snacks. The only thing I would add is to watch out for the kind of coconut you use… most of the kinds they sell in the baking aisle are doctored up with sugar and chemicals. You can buy unsweetened/organic coconut online or in the organic section. The flaked organic stuff I bought made the dough drier, but I just added a tablespoon or two of water to help it stick together.

Made these last night. My mom is coming for a visit this afternoon and she no longer eats carbs so I decided to make these for a treat for her. I have to confess there aren’t many left.
I loved them! Next time I’ll probably eliminate the pecans to reduce the cost. Oh my gosh they are delicious!
Do these taste a lot like dates? Because I think they look beyond delicious but I’m not too fond of how dates taste that’s why I’m asking 🙂

Thank you for another fabulous recipe, Katie. I did not have the dates, cashews or coconut, so I substituted pitted prunes, almonds and a scant amount of coconut oil and they still came out great. I cannot wait to try them using the proper ingredients:)
