Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2 tbsp cocoa or cacao powder
- 2 tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

This is the easiest dessert I have ever made. And it tastes fabulous! I halved the recipe but added 2T of sweetened coconut; was able to get a really smooth dough.

they are delicious but OMG WHAT. A. MESS!!! those sticky dates are a real pain in the a**! I only have a really small food processor so I had to do everything in small portions which took longer than I thought. But the end product is really lovely – I rolled the balls in powdered sugar to make them less sticky to eat.
I love this recipe, its perfect. To add to perfectness try a few drops of 100% pure organic orange essential oil or peppermint (especially peppermint for the holidays). I discovered this becaise i just cut an orange on a cutting board and while making the balls from the dough i droped some crumbs on the cutting board. Of coarse i had to eat the crumbs and it had a hint of orange that added a new depth to it. Or maybe some orange zest in the recipe, yum!

Ok, I’m just strange… it seemed like a good idea when I was writing the post.
I used this recipe as a base for my katie inspired christmas rum-balls!! My favourite holiday treat usually, but my mum’s recipe is full of butter and powdered sugar!!!!
So this year – my healthy rum balls replaced the pecans with cashews for a more neutral base and replaced the vanilla with 2tsp rum and used half the coconut in the mixture and the other half coconut on the outside to roll the balls in :D:D

I made these today and they are absolutely DELICIOUS! I was a bit skeptical at first, because I don’t eat dates (I actually despise them). I made them for my mother and tried it because it smelled heavenly… and guess what? They taste JUST like a brownie. Who knew?? Thank you for sharing this recipe

This recipe made me go out today and buy me a food processor as my Christmas gift to me:) I’ve been wanting one anyway since you have several recipes that you recommend using one.
Just made four batches of these to give as Christmas gifts for my neighbors. I “had” to eat one, just to make sure they were “safe”….yummmmm! I will deliver them tomorrow…I think everyone will LOVE them!

I’m curious, could you use dried dates rather than fresh for these, or would it totally ruin things?
I’m not sure I’ve actually seen fresh dates here in a long time, but I will keep an eye out at our local Turkish markets. If anyone has them other than dried, they’d be it.
