Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2Â tbsp cocoa or cacao powder
- 2Â tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

Katie – These are amazing. I have made them a handful of times and they are my new go-to when I need a little sweet. I now have dates on my weekly grocery list so I know that I can make these at any time! I love ALL your recipes! I just have one question…I’ve been searching all over for no sugar added shredded coconut and I can’t find it anywhere ! Any suggestions?
Try the bulk aisle of any health food store or Whole Foods or even some regular grocery stores with a bulk aisle. Some grocery stores also sell it in the baking aisle (near the canned pumpkin and Diamond walnuts).

These were so delicious! Tasted like fudge. I made them with about 7-8 dates (not sure how many 3/4 cup is) and I only got 5 balls, each about the size of a cotton ball. How many dates do you use to get 10? What does 3/4 cups translate to?
I loved this recipe. I don’t love dates though and was wondering if you have tried this with any other dried fruits and if it worked? I thought about prunes or raisins, but would love any other ideas.
Tried making these today, and I learned that it was a bad idea to grind the nuts in the food processor too. They ended up releasing a lot (!) of oil, so the mixture was greasy. Probably would’ve been better to mix them in by hand after blending the rest of the ingredients. Taste is still good, but texture is way too oily.
Just made these, and they are yum!! Fast, too. But when I plugged them into MyFitnessPal, the nutrition info is way different. I used 1/2C pecans, as that was the size of the bag, and medjool dates (it took 10 to make 3/4C) I don’t know if that made the difference. I made 10 balls, will probably do 14 the next time, as they were a bit big. But 10 balls comes to 110 cals, 5 fat, 20 carbs, 1g protien. Pretty much double your nutrition info. I think the difference is in the dates, volume vs. weight, but the texture/consistency seems right. Otherwise, I’d think they’d come apart.
My kids just devoured these! Btw if I put a date in front of them they would never in a million years eat it but these… So good!
Without trying to read allllll the commens has anyone tried freezing these???

What you’re doing here is absolutely wonderful and I’m always excited to come check out CCK for new recipes. I just tried the these bites and they are super delish and my mom LOVES THEM! So great to have something super chocolatey in the house when I only have cocoa powder and don’t want to make a huge batch of something full of fat and processed sugar that I most definitely will eat the entire batch of. I have made these twice in the last 3 days and they are so yummy. I used cashews
the first time ( a double batch) and pecans (a triple batch) the next. Both are great with cashews being my fav. I think!!!!!
