Gluten free, paleo, vegan, egg free, peanut free, no bake and SO easy to make!

No one will ever guess that such fudgy chocolate balls could possibly be 100% free of sugar, butter, and flour.
Shhhh… no need to tell anyone they’re healthy. ![]()
Healthy?
Who, me?

Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2Â tbsp cocoa or cacao powder
- 2Â tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

Awesome!
I think these could be the basis for a great rum ball recipe…
Hi Katie! I just made these for the second time, but this time I rolled the balls in cocoa, and lightly pressed them ( to make cookies) and it is divine, when I bit into the cookie it reminded me of Edmund from The Lion the Witch and the Wardrobe movie when he bit into the turkish delight! (Couldn’t think of another way to describe them haha) So good. 🙂
Hi Katie! I just stumbled across your website, and it seems awesome. However, I just tried to make these German Chocolate Fudge Bites, and I can’t get them to stick together. Can you give me some advice? I would really appreciate it!
I love your German Chocolate Bites. Going with the whole German theme I have made Black Forest Cherry Chocolate Bites with half dates and half dried cherries. I have also made Sachertorte Chocolate Bites with half dates and half dried apricots. Both very good. Thanks for your wonderful site, Katie!
Just made these and they are delicious! Followed the recipe exactly as stated, they turned out awesome. Mine yielded about 7 brownie bites so I ended up making another quick batch really quick.
I made these tonight and they tasted great!!! However, they turned out a little crumbly- I could get them into balls but they fell apart pretty easily. Any ideas on how to fix that or what went wrong?
None-the-less they tasted great!!!
Try adding up to 1T water if they’re too crumbly. And look for SunMaid dates, which are softer.
I just made these. I bought dates at Trader Joe’s today so I could make some of your desserts. Sadly I do not have a food processor or a blender. I have a little chopper/processor about a 1.5 cup capacity that was my mom’s. It is probably from the 80’s and I almost killed it making these (on a smaller scale of course). I made it smoke and it was smelly but they were tasty and very much worth it! I really need to get a real food processor to make more of your desserts. I love your blog and have tried some of your other recipes too. Thank you for giving me some healthy/ier alternatives to satisfy my sweet tooth and chocoholism.
Thanks Katie!
I used almonds and left out the chocolate. So delicious! Each ingredient really tastes so great together. You’re a genius. I love your stuff and I make it all the time.
Really delicious and sooo easy!! I rolled them in dessicated coconut and they came out so good!
Thanks!
I just made this recipe, and it seemed really dry. I had a hard time making it stick into balls. Any suggestions?
Maybe your dates were too dry… in that case you can add just a *little bit* of water to the food processor. Or just process longer, and the nuts will release oil and the dough will become stickier. But if possible, try SunMaid dates, as they have always been super soft and moist when I use them.
Yeah mine were quite dry so I added a little water and it was fine 🙂
Wow, those look amazing! Absolutely love the pictures and really can’t believe, they’re healthy. I definitely have to try them and I am pretty sure they are the perfect gift of sweetness for the nex party!
Oh my goodness. I made these a few nights ago… They work out to about 57 calories each (I’m on a calorie controlled diet and wanted something chocolatey to snack on). They are INCREDIBLE! YUM!!!
THESE ARE SO GOOODD! Brownies are my favourite dessert and these taste just like them! I have made this recipe loads of times although I didn’t use shredded coconut and I substituted the pecans for walnuts as I didn’t have them.
I made these last night, and I may not make them again until Christmas BECAUSE my husband and I simply could not stop eating them! Oh my goodness!! Thank you so much for this delicious recipe. They will be made (and devoured) again!!
OH MY GOSH YUM!!! I used almond meal as I had it in the cupboard, needed a teaspoon of water to bring it together but YUM-O! Thanks for your amazing recipes!
OMG, these were delicious. Used all these healthy ingredients, then crushed some butterscotch chips to roll them in, to be truly my idea of German Chocolate Bites.
Every ingredient that I put in the magic bullet, needed to be scraped from the sides. To be expected I guess. Dates are gooey, pecans have oil that makes them stick to each, same with chips.
Took these to a family and friends gathering. So many compliments! My 80-yr old Mom liked them too.
A hit all around. I made a double batch. That made close to 30.
I found it easier to roll the ingredients by wetting my hands first.
Yim. No matter how many times I say it, just y-u-m.
