Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2 tbsp cocoa or cacao powder
- 2 tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

Fantastic recipes , my 2 1/2 year old loves the nutella and the fudge pops , the whole family enjoys the sweet recipes as we all have a sweat tooth!
These sound delicious and I want to make them right now, but I only have macadamia nuts and walnuts on hand! Would the taste change dramatically if I substituted the pecans for one of these other nuts? Thanks and keep up the good work!

One of my favorite foods is coconut. But I’m sorry to say that coconut (oil) is the worst thing that you can put in your body to clog up your arteries. I don’t where coconut oil came from as a wonder food these days! i hear from many people that “at least I am taking coconut oil” as if it were a medicine! I saw my cardiologist yesterday and asked him what he thought about the controversy of coconut oil, healthy vs unhealthy. When i asked his opinion, his face quickly turned white. He has a lot of jars and pills in his office. He uses them as props, some healthy some not. He had a jar in his office. He picked up the jar of coconut oil and said one thing. “Do you actually want this in your arteries?” Very scary, 1 tsp or less, it doesn’t matter, building up slowly or fast. It still builds up and stays there. He is the top lipid and trigliceride specialist at the hospitals that I attend which is one of the top hospitals in the country. There has to be an alternative to the taste and texture. Can you come up with a good alternative? Some of the recipes you suggest that it can be left out. Is that the alternative?
Thoughts on adding in some chocolate protein powder or ground flax seed?

These and the Raspberry Fudge Bites SAVED me during my 21-day “Clean” cleanse. Thank goodness Raw Cacao powder is approved, I need my chocolate! Thank you for creating such decadent tasting recipes with ingredients I actually want to put into my body! These were especially rich and yummy, I did add a touch of coconut oil to help it hold together, my food processor could have been the issue! But such a delightful treat. YUM!
Thank you for this awesome recipe! These turned out yummy and chocolatey and was exactly what I needed since I wanted a good chocolate dessert but without the refined sugar and cream. All the sweetness comes from the dates and it’s packed with fiber and natural goodness!

I made these with half walnuts and half cashews since that’s what I had and they’re delicious! Toddler approved too – he stole a second one off the counter 😉
I made these tonight, and LOVED them! My four-year-old boy loved them too. I brought them to the table for dessert, and my son had a mini butterfinger candy bar in his hand. He took a bite of the Butterfinger, then tried one of these German-Chocolate Fudge Bites. He put the Butterfinger down and reached for another German-Chocolate Fudge Bite! I will definitely be making these again.
This are DEE-licious! I have made a few times in my Vitamix and it is do-able HOWEVER it is really annoying to scoop it all out of the bottom under the blade and also- for some reason if you do not get it right up to full speed (like you do when making almond butter) and tamper it, the almonds become ROCK HARD. Cant bite them at ALL.
I went off sugar a few weeks back and was craving something with chocolate. I just made these. I didn’t get an overwhelming fudge flavor like I was hoping for. I added some olive oil to help them mix up right & switched the pecans to macadamia nuts. In the future this could easily be fixed by soaking the dates with a little bit of water 15 min prior to blending. These were really good, not too sweet, and reminded me of the filling you might find in those fruit & nut boxed candies. I would make these again with some sort of melted chocolate mix to dip these in. I feel like a hard chocolate shell would be a great finishing touch.
