No one will ever guess that such fudgy chocolate balls could possibly be 100% free of sugar, butter, and flour.

Shhhh… no need to tell anyone they’re healthy. Winking smile

Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.

Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.

So basically, it’s going to be one big chocolate fest.

But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…

I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites

(Makes 10-14 balls)

Inspired by my Hot Fudge Brownie Larabars

  • 3/4 cup pitted dates (120g)
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 2 tbsp cocoa or cacao powder
  • 2 tbsp shredded coconut
  • 1/3 to 1/2 cup raw pecans
  • optional: feel free to add some chocolate chips

Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

    So, I was quite skeptical about the concept; but I’ve been looking desperately for a “healthy” treat that I won’t feel guilty about, IF I decide to partake of it on a daily basis. My Nanny made a fantabulous German Chocolate Cake when I was little, so I decided I would take my foray into healthier desserts a bit further with this chosen one. (I’ve already made your cookie pie, which my healthfood averse fiance’ inhaled.) Anywho, I was very pleasantly surprised! I LOVE them. I did add 2T of chocolate chips to the concoction. With my addition and making 10 balls, the nutritionals are 97 calories and 5.8 grams of fat. I can have two of them for less calories and fat than a candy bar AND get in some health benefits while I stuffing my face! I am totally stoked to try more of your recipes and will never doubt said recipes again!

    Wow! Was this quick, easy and delicious. I love the idea of using the plastic bag to squish it together after taking it out of the food processor (It was fun). I also added some chocolate peanut butter powder along with the cocoa powder, and, of course, the chocolate chips.
    I’m bringing what’s left to my friend’s house. I’m also bringing along toothpicks for retrieving, otherwise the cocoa/dates gets stuck to your hands. Thanks for another awesome recipe. I’m looking forward to getting your recipe book:)

    Katie, do you have a healthy vegan version of tres leches cake?! This is my favorite but we recently completely converted to vegan and I hate to give up my favorite cake! I didn’t see anything on your site, but maybe I missed it? Or….maybe it will be your next challenge?:)

    The first thing I would make in the Vitamix would be.. I think it would probably be a selfmade nut-butter! Maybe a peanut butter because I LOVE peanut butter!

    Hi I have to cook for a class that is gluten, but, and cow’s milk free, is there anything nut free to substitute for the pecans? Or can I leave them out altogether?

    Love your stuff! Is there a healthy chocolate chip out tbere? If not I make my own chocolate but I think you should try making stable healthy chocolate chips for us who are a tad, let’s say eclectic … I was thinking dates,/ raisins,coconut oil and creme, and some amount of natural bees wax and rice bran solubles? If there is someone who can or let’s say would…It’s KATIE!

    This recipe looks awesome! The first recipe I would make with my Vita-mix is a kale smoothie. It is so hard to breakdown kale in my blender and food processor.

    Thanks for the recipe! My son’s preschool is having German Culture Week and they are asking all parents to bring a dessert to share. The school focuses on healthy eating and it’s nut-free, so it was challenging trying to find something to make. These look really easy, delicious and perfect for small hands! Can’t wait to try them. 🙂
