Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2 tbsp cocoa or cacao powder
- 2 tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

I love German chocolate! I often make my pancakes, brownies, and cakes with chocolate/coconut/nuts…such a great combination!

These look fantastic! I love all the fudge bites/bars you have on your blog, they are some of my favorite recipes. Unfortunately, I don’t have a food processor with me at uni so making them will have to wait until I return home. sigh…
I think I’m going to tell my boss I have to leave the office STAT for an emergency…and bake your fudge bites! How long would they (and your other bars) keep? Do I have to put them in the fridge or do I “have” to est them all quickly?
They’ll probably last a few days un-fridged. But for optimum freshness, I’d store in the fridge for a week… or freeze for months! 🙂

These look delicious! I am about to get a Vitamix blender and was wondering…when you say to use a “food processor” can I use the Vitamix, or does it depend on the recipe? I don’t have a food processor at the moment… Thanks!
Honestly, I had trouble with the original fudge babies (a similar recipe) being very sticky when I made them in my vita. BUT I know a lot (a lot!) of commenters have made them in the vita with no trouble, so maybe I did something wrong. So I think that yes, it’ll work in a vita.

I just made these little guys and they are so, so awesome! I didn’t have pecans so I used walnuts and cashews…about fifty/fifty. My 2 year old and 4 year old are currently chowing down. 🙂 I hope I can save my husband a couple…

Y-U-M. Think about using organic mejdool dates (I buy mind at Whole Foods). Soak them in water for a bit to soften them up. They have an amazing, caramel-like sweetness.

whenever I eat German chocolate, the pecans are removed because of my nut allergy. is it possible to make these without pecans? or are they needed in the recipe to help the dough stay together? thanks Katie! 🙂

Nicole, I’ve used cashews and almonds and they still taste amazing so it should work fine with other kinds of nuts 🙂
