No one will ever guess that such fudgy chocolate balls could possibly be 100% free of sugar, butter, and flour.

Shhhh… no need to tell anyone they’re healthy. Winking smile

Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.

Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.

So basically, it’s going to be one big chocolate fest.

But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…

I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites

(Makes 10-14 balls)

Inspired by my Hot Fudge Brownie Larabars

  • 3/4 cup pitted dates (120g)
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 2 tbsp cocoa or cacao powder
  • 2 tbsp shredded coconut
  • 1/3 to 1/2 cup raw pecans
  • optional: feel free to add some chocolate chips

Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

    Just made these and they were sooo amazingly good and even the hubby approved them. I am so excited to have found your website. Mine came out pretty dry though, do you think it was because my dates were not fresh enough?

      I think it’s just a difference among different types of dates. As I wrote in the recipe, I like Sunmaid because they’re super-soft! 🙂

    By the way, I’m wondering if you can share a list (and photo!) of your kitchen staples? Do you store your ingredients (e.g. dates, coconut) in jars? I know buying in bulk is cheaper but I find myself nibbling them before I even started baking!! It’d be great if you can share with us :))

      I should probably do a post with photos of my cabinet and fridge. Great idea :). I also have a short list of common items on my faq page:

      What foods should I have on hand to make your recipes?

      It’s difficult to give a short list, since every recipe is different. I do try to keep my recipes as simple as possible (i.e. no hard-to-find flours or other obscure ingredients you likely don’t have on hand). Some items called for in many of my recipes: cocoa powder, rolled oats, spelt flour (or ww pastry or oat flour), almond milk, bananas, coconut butter, pitted dates, nunaturals stevia (or agave or maple syrup or regular sugar), applesauce, and peanut butter.

    I just made these…….FABULOUS!! I couldn’t find the sunmaid brand and had to pulse them a lot in the food processor as they were kinda hard. I will hunt for the sunmaid brand because there will be a next time, these were to die for!!

    Katie, just wanted to let you know you’re awesome – just in case you don’t hear it often enough! I can’t eat sugar – I’m a former sugar addict, it makes me terribly sick, and diabetes runs in my family. To me, the stuff is essentially poison. I also don’t eat much dairy except for some butter. SO, you can only imagine how hysterical I was to discover your chocolate frosting shots. I hadn’t had dessert in forever. My husband kept laughing at me licking the spatula clean. Anyways, THANK YOU!! And I can’t wait to try your coconut banana fudge 🙂

    Wow Katie, I just made these (but I used cashews and almonds since pecans are kinda expensive here in germany) and they turned out great! Although I think I’ve used a little too much cocoa, they still taste amazing! This was actually the first time I’ve tried one of your recipes (but I’ve already looked through a lot of them) and all I gotta say is: I will definitely try some others now! Thank you for this great blog 🙂

    These are terrific! I had great success with Dole packaged dates, which were sufficiently moist to bring the mixture together. I also used sweetened flaked coconut, which probably added a little more moisture than using unsweetened shredded. Rolled some in cocoa powder, some in coconut, and some in chopped pecans, and they looked so elegant, all lined up on platter. Thanks for a fantastic recipe!

    The German Chocolate fudge bites–I developed a recipe that is very similar, but with Carob powder, and sunflower seeds–for anyone who has a problem with chocolate. They are delicious. The dates make it sweet enough.

    I made these today…AMAZING! I did add a little bit of mini choc chips and I added almond slivers in place of coconut(not a huge fan of coconuts). My 10 yr old son loved them and he noted that they had a slight coffee flavor to them, maybe from the cacao? LOVE LOVE LOVE!!! Thank you for the recipe!     I just made these, and I used unsweetened coconut and almonds (because I didn’t have pecans.) Absolutely delicious!! Thanks for another great recipe!
