No one will ever guess that such fudgy chocolate balls could possibly be 100% free of sugar, butter, and flour.

Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.

Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.

So basically, it’s going to be one big chocolate fest.

But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…

I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites

(Makes 10-14 balls)

Inspired by my Hot Fudge Brownie Larabars

  • 3/4 cup pitted dates (120g)
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 2 tbsp cocoa or cacao powder
  • 2 tbsp shredded coconut
  • 1/3 to 1/2 cup raw pecans
  • optional: feel free to add some chocolate chips

Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

    YUM! I make this with jsut one nut and one dried fruit…calling them (awkwardly) Nut Balls….But we just made Almond & cherry ones and renamed the concept ROLY POLYS! Much less embarrassing name for a treat we eat often!

    LOVE this recipe! I’ve made all your fudge babies and these are by FAR the best of the bunch. I used Dutch Process Cocoa and did add two tablespoons of chocolate chips, which made them even more amazing.

    love the sound of all your recipes but this was the first one my friends and I decided to try…absolutely incredible! we didn’t have vanilla extract but we did have almond so we used that instead and then rolled them in more cocoa powder before freezing them before dinner. Cannot wait to make more!!!!!!! Already craving them again.

    Hi! I love your blog (I’m in Dallas area too!) and I was wondering what type of blender/food processor most people are using to have success.

    I was using a cheap blender I got from Target and had a some success and some awful messes. So, I went and got a small food processor and was eager to try some more of the recipes but still not getting the results like I see on here with the bean recipes, etc. I find when I dump everything in, half of the stuff gets stuff under the blades and I end up having to dig it out with a spatual or something – (last night my finger slipped while washing it and I ended up in the ER getting stiches last night!) 🙁

    Who knew healthy cooking could be so dangerous!

    I’ve heard mention of Vita-Mix and Magic Bullet. Anyone have a recomendation for a product that works well for all the recipes(and is safe!). Thanks!

      I have a Cuisinart and HIGHLY recommend it! Yes, it was expensive, but mine is around 7 years old and still is very powerful.

        Thank you! I will check into one of those (after the stitches come out!) I can’t believe I did something so dumb- my finger just slipped and there was the blade. I love your blog and will keep trying (once my husband will let me back into the kitchen). lol

        It looks like the Cuisinarts are in about the $200 range? I could handle that. Couln’t believe how pricey those Vita-Mix are. The Magic Bullet seems to get mixed reviews people either love it or hate it. I never cared about a food processor until I found this blog! It’s going to be 2-3 weeks before I can buy one so if anybody reads this and has specific model # or info they can share of one they are really happy with I would appreciate it. Thanks!

    Just made these tonight. Very good. I had a hard time though getting the balls to stay together. They kept crumbling. I couldn’t find the brand of dates you recommended so I wonder if it was because my dates weren’t as soft. I think I put too much coco in too. I’m definatly going to try these again though!

      You can leave them out a few days, actually, if you prefer :). And yes, they freeze well!

    On top of being as delicious as they look, they really picked up my blood sugar quickly, which is awesome because I tend to become a *tad* cranky when I’m hungry. Good work!
