No one will ever guess that such fudgy chocolate balls could possibly be 100% free of sugar, butter, and flour.

Shhhh… no need to tell anyone they’re healthy. Winking smile

Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.

Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.

So basically, it’s going to be one big chocolate fest.

But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…

I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites

(Makes 10-14 balls)

Inspired by my Hot Fudge Brownie Larabars

  • 3/4 cup pitted dates (120g)
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 2 tbsp cocoa or cacao powder
  • 2 tbsp shredded coconut
  • 1/3 to 1/2 cup raw pecans
  • optional: feel free to add some chocolate chips

Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

    I just made them and have fell in love. While reminiscent of traditional fudge, I loved the unique taste and texture of these babies… These left me feeling more satisfied then I would ever have snacking on traditional fudge. I ate three as a mid-afternoon snack, and that kept me going til dinner… You don’t need to be a vegan, vegetarian or raw foodie to love these either, that’s my feeling… Maybe I’m biased because I love dried fruits and nuts, but I think anyone looking for an out of the ordinary chcolate treat should give these a try. They are so tasty! Their healthiness is just a bonus!!

        anything other than nuts? My son has a few friends with nut allergies & i’d love to let them try these too! I have mini choc chips and graham crackers – wonder if adding either of those would make up for the bulk of the pecans, or throw off the texture too much?
        Ideas?

    amazing!! Love them. I love that you don’t use artificial sweeteners, and can still say ‘sugar free’ about your treats. Just what I’ve been waiting for! Have you used pitted dates in a cookie yet? Or cookie bar? Actually, if I could put in a request 🙂 My mom used to make magic cookie bars when I was a kid (http://allrecipes.com/recipe/magic-cookie-bars-from-eagle-brand/) and I would love to see a clean version of it!

      I’m actually working on them! So far I have a basic coconut-bar recipe, but I need to incorporate the chocolate and the base. If you’re interested, here’s my tester recipe that I’m going to work with:

      Coconut Crack Bars

      Makes 6-8

      1 cup shredded coconut (unsweetened) (80g)
      1/4 cup agave or maple syrup (or 1/4 cup water and 2-3 stevia packs)
      2 tablespoons virgin coconut oil (melted or hard)
      1/2 tsp vanilla extract
      1/8 tsp salt

      Combine in a food processor. Squish in a small container (I used a 7×5) and fridge for an hour before trying to cut. (Or freeze for 15 minutes.) Can be stored in fridge or freezer

    I think these look devine! I made your chocolate fudge pie more than once now and each time I add a different twist. The first time I skipped the crust and added mint and set it in a loaf pan, sort of like a chocolate pate. This time I added coconut extract and a handful of coconut and used a mini ice cream scoop to make them into ball. they look similar to these ones with a less fudgy texture, but OMG! Yum-o-rama! Love your site and come here often for healthy desserts!

    My 2.5 year old daughter and I just made these. I handed her one when we were all done. “Is it a ball?” She asked me. “Yeah.” “Is it a poo ball?” HAHAHAHAHA She tasted one and wanted to eat them all. They are delicious. And, I don’t have to feel bad about giving her one 🙂
    P.S. I didn’t have any pecans, so I used walnuts. Still delicious. I wonder how they’d go with a bit of cherry and some macadamia nuts?

    Just made them, they came out great. It was quick (and I liked that it was just a little recipe) and the kids and hubby all thought it was great. Next I’m going to try a variation with coconut oil for creaminess and oats and millet instead of the coconut. THANKS!

    I made these today – was a bit difficult to make balls out of the dough (had to put it in a bag like you did, smush it into a ball, put in the fridge for a while, and even then it was still crumbly) but after letting the balls sit in the fridge for a few hours, these were absolutely divine. I think I might like them even more than the regular chocolate peanut butter fudge babies I usually make. Sooooo good 🙂
