No one will ever guess that such fudgy chocolate balls could possibly be 100% free of sugar, butter, and flour.

Shhhh… no need to tell anyone they’re healthy. Winking smile

Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.

Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.

So basically, it’s going to be one big chocolate fest.

But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…

I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites

(Makes 10-14 balls)

Inspired by my Hot Fudge Brownie Larabars

  • 3/4 cup pitted dates (120g)
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt
  • 2 tbsp cocoa or cacao powder
  • 2 tbsp shredded coconut
  • 1/3 to 1/2 cup raw pecans
  • optional: feel free to add some chocolate chips

Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

    Does a vitamin purée the dried dates to make these? I Am considering making the big purchase! I would like to know if it works. The dates are so hard on my food processor (bullet express)

      Some people say it works, but I really don’t like making them in my Vita mix as they get super-sticky. I’d HIGHLY recommend a good food processor. Mine is a Cuisinart and it’s like 7 years old but still works well!

    Hi Katie, I was attempting to make this recipe but I am not sure how much dates to use. Your recipe says that 3/4 cup = 120g, but my date package says that 3/4 cup = 60g, so I am not sure if I should use 3/4 cup OR 120g?

      Yeah, packages lie a lot when it comes to how much something weighs! It’s crazy! Like it’ll say a 1/2 cup of oats is 40 grams… when really if you measure it it’s 1/3 cup! No clue why they are so inaccurate.

    I am really disappointed in the nutritional value that were assigned to these. They look yummy, but to list these as 0g of sugar is terribly irresponsible. For anyone who doesn’t know better or is just making the switch to preparing foods without processed sugar may not realize how high the sugar is in dates. While there isn’t any processed sugar in this recipe, dates are still a sugar and the nutritional value is distorted.

    I would strongly encourage you to re-evaluate how you determine the nutrients and or not post them if you can not find a way to do so more accurately.

      Pamela, it specifically says “added sugars.” It doesn’t say 0 grams of sugar.

        I believe Pamela might be referring to the “100% free of sugar” line you use in the opening of the post. It gave me pause, too, once I scrolled down and saw that the sweetener was dates.

    These are UH-MA-ZING!!!!! I love that they can be made in less than 5 min! My problem is that I don’t stop eating them once they are made 🙁 How do you control yourself?! I seriously work out 5x a week just to eat chocolate 🙁
