I made up the following recipe to use a ton of mushrooms (an impulse buy from the Asian market, whose mushrooms are much less expensive than Whole Foods’). It’s not cold outside, and we’re not sick; but we loved this hot, comforting soup all the same.
It reminded me of an episode of Friends (everything reminds me of an episode of Friends) where one of the characters–a vegetarian–makes noodle water because she can’t have chicken soup. Not that I’ve ever had noodle water (eww?), but I’m pretty sure this no chicken mushroom soup is much better!

No Chicken Noodle Soup
(Get well soon soup!)
- 14 oz sliced mushrooms (I used a combination of oyster and shiitake)
- 4 oz sliced portobello mushrooms (or sliced button mushrooms)
- 1/2 cup chopped onion
- 1 and 1/2 tablespoons garlic, minced
- 1-3 tsp olive oil or vegetable oil
- 45 oz broth of choice (I used Imagine No-Chickn)
- 1 teaspoon dried thyme
- 3 and 1/2 tablespoons red or white miso – use chickpea miso for soy-free soup
- optional: rice, a protein source, noodles (I added soba noodles, because I adore them)
- optional: scallions for garnish
Heat a sauté pot, then add oil, mushrooms, and garlic. Cook 8-10 minutes. Add broth and thyme, and bring to a boil. Cover and lower to a simmer for 20-30 minutes. Take off heat and add miso. (Miso is added at the end because boiling it destroys the health benefits.) Stir to dissolve. If desired, add cooked rice or noodles, and/or a protein source. Makes 4 large servings or 6-7 starter servings.

I haven’t actually gotten sick in years, but I used to get Strep throat often. So my favorite things to eat were cold, soothing foods like ice cream or sorbet. Definitely not chicken noodle soup, although I did like chicken noodle soup when I wasn’t sick. Actually, I think I just liked the noodles. Mmmm noodles…

If I liked mushrooms, I would definitely try out this soup, but I don’t so I won’t 🙁 HOWEVER, it does totally remind me of one of my comfort foods when I’m sick with a cold. I adore hot & sour soup when sick! It makes me warm from the inside out plus it drains my sinuses (sorry if that’s too graphic) which is perfection when you are sick. As for the chocolate shots, I have a blob of thickened coconut milk in my fridge right now! Guess I know what’s for dessert tonight! Also, that reminds me, I wanted to ask you this: when I opened this can (thai kitchen) the coconut had already separated from the water so there really wasn’t any reason to leave it in the fridge over night to separate. I just came out of the can in one big blob. Is that normal? I’ve always purchased lite coconut milk before, so I wasn’t sure if I got a bad can or not. It tastes fine & I haven’t gotten sick so I’m hoping it’s ok!

My favorite when I am sick is a vegan carrot, peanut butter and ginger soup. (I add “vegan” because that is not my usual way with food. ^^ ) It’s soothing, filling and spicy. And kind of magical, too.
I love this idea and the OTHER ingredients as I’m not a mushroom liker. I would still like to make and didn’t know if you might have a good healthy substitute as mushrooms are the main ingredient… 🙂 Some kind of bean and/or other non-slimy veggie. 😉
Sorry, I never know how something will taste unless I try it! But soups are very hard to mess up… just throw in a bunch of stuff that sounds good :).
I’m not a mushroom person, but your pictures look great! The choclate froosting shot is more my speed! 🙂 When I’m sick I like to eat chicken noodle soup, or this may sound gross, but I like to have Mrs. Grass soup with saltine crackers. I think it’s because my Mom used to give it to me as a kid. Not healthy at all, but it was so good!
You’re so lucky you haven’t gotten sick! I get sick around the time my monthly visitor comes, nearly every time >.< It really sucks. I guess it isn't really being sick in the virus/bacteria sense as I'm not infected, but I'm just about bed-ridden! I bet this soup would make me feel loads better anyway 🙂
I can’t wait to try this. I’ve been looking for more recipes to use my freeze dried mushrooms and vegetarian chic broth in and this fits the bill for both. Yay!!!

In response to your question, I love any type of homemade brothy soup when I’m sick. My mom makes really good veggie noodle soup! When I was younger (before I went vegetarian then vegan) I also always loved those cheese-filled chicken nuggets. They always made me feel better!

Yes! I would LOVE to fly! On a completely random note – It just occurred to me that if you had a t-shirt (which would I’m sure be awesome, because I’ve only ever seen you make awesome stuff) that I would buy it and wear it proudly, and maybe even leave the “One-minute-chocolate-cake” smudges around my mouth for added effect. Plz tell me you’ll think about it (selling a t-shirt I mean) 🙂
