Healthy cookie dough ice cream? That means you can eat twice as much, right?
Right???!!!

Is there anyone in this world who doesn’t love cookie dough ice cream? Melty vanilla ice cream with bite-sized pieces of soft, unbaked cookie dough packed into each creamy scoop. What’s not to love?!

At least, that’s what I was thinking yesterday as I devoured this cone.
And then went back for seconds.

Healthy Cookie Dough Ice Cream
(can be gluten-free)

- 1 1/2 cups creamer (such as Silk) or canned full-fat coconut milk (see nutrition link below, for notes on a lower-calorie substitution)
- 1/2 cup milk of choice (or omit and increase the creamer or coconut milk to 2 cups)
- 1/4 cup brown sugar or coconut brown sugar (Agave or pure maple syrup will also work. I haven’t tried xylitol in this recipe.) (40g)
- 1 packet nunaturals stevia, or 1 extra tbsp of the sugar or agave listed above
- 1/8 tsp salt (don’t omit)
- 1/8 tsp baking soda (This is for flavor and can be omitted if desired)
- 1 and 1/2 tsp pure vanilla extract
- chocolate chips
Mix all ingredients (except chips) in a dish. Transfer to your ice cream maker. (I have a Cuisinart, and it took 15 minutes to turn the liquid into ice cream.) Mix in chips. Eat now, or freeze for 20 minutes if a firmer texture is desired. (Note: homemade ice cream has its best texture if eaten the same day it’s made.) If you don’t have an ice-cream maker, freeze mixture and then re-blend in a Vita-mix or Blend-tec. Or you can use a different ice cream recipe as the base and still make the following cookie dough recipe:
For the cookie dough:
(Alternatively to the recipe below, you could also use my recipe for Cookie Dough Truffles.)
- 1/3 cup plus 1/4 cup oat flour (70g) (You can probably sub a different flour; I’ve just not tried it and therefore can’t vouch for the results.)
- 1/8 tsp salt
- 1/4 tsp baking soda (for flavor)
- 2 tbsp brown sugar or coconut brown sugar (You can use xylitol; you’ll just lose that extra “cookie dough” flavor from the brown sugar) (20g)
- 1 tbsp plus 2 tsp xylitol or white sugar (21g)
- 1/2 tsp pure vanilla extract
- 2 tbsp plus 2 tsp milk of choice, or more if needed (40g)
- optional: 1 tbsp vegan butter or oil (vegetable or coconut oil) (14g)
Mix your dry ingredients very well, then add in wet and mix. Squish into a giant ball, then break off pieces and stir into the already-made ice cream base.

This looks SO good! Cookie dough was always my favorite flavor, can’t wait to make this.
As for random foods I hate that other people love, I just can’t stand most cooked veggies. Carrots, broccoli, green beans…I like them when they’re raw, but they just become totally icky when cooked. I think it’s a texture thing, really. Also Hamburger Helper. Not really an issue now that I’m vegan, but my family used to eat it ALL THE TIME and even the smell made me nauseous.

I can’t STAND broccoli….no matter how it’s seasoned or what it’s mixed in with. I won’t eat it…tastes bitter to me.
I’m not a big fan of pumpkin.. I don’t have it very often.. I don’t HATE it.. it’s just nothing to me. I don’t think there’s a food that I just can’t stand. I haven’t tried everything.. so I don’t know yet. I can’t say much about coconut or chia seeds. I’ve only had coconut flakes (on a dessert) and I’ve never had chia seeds… and I’ve had AN avocado.. only once in a salad. So many foods out there …I just can’t think of one I can’t stand.
I have a question about the ice cream. Do you think it would make a good cookie dough frozen yogurt (maybe vanilla yogurt.. or even better chocolate cookie dough fro-yo) Maybe I could combine this and your brownie batter frozen yogurt. Doesn’t it sound yummy?! I am going to try this!

I make ice cream with just yogurt and milk all the time! Just make sure you either use an ice cream maker or stir it every 30 minutes or so if freezing to keep it from getting too icey. Check out my blog for more info. 🙂
I found out after my dad got rid of our blender that we had an ice cream maker and food processor attachment! So, now we don’t have an ice cream maker. I may or may or may not just make the cookie dough to eat… 😀
Looks delicious! I’m just confused how why you would consider it healthy? It still has plenty of sugar and fat. Yes, I know there are some good fats, but coconuts have such a massive amount of it that even a small serving of this ice cream would give you what you need for the day.

Yes it has sugar, but it’s much lower in sugar than most other cookie dough ice creams. And I believe (others disagree, which is ok too) that we need much more than the 5 grams of fat you get in a serving of this recipe. Also, the cookie dough is whole-grain… and don’t forget the mental health benefits you’re getting from indulging in a childhood favorite dessert :).
Oh, and since it’s vegan it’s also cholesterol-free.

I guess my confusion comes from when you use the term “healthy,” because it implies that this dessert is actually healthy – the same word we use for whole grains, nuts, fruits and veggies. It’s definitely healthier than most ice cream, as you pointed out, but I think it may be a bit misleading to call it healthy. It’s still a dessert and a treat, albeit a slightly lower calorie/sugar one.
I’ve enjoyed making many of your recipes, both sweet and savory, but I just can’t get my head around calling ice cream “healthy.” Healthier, definitely, but not healthy.

I’m with Megan… this is a lighter version, but it is maddening how everything on this site is labeled “healthy.”
Fruits, vegetable, whole grains, legumes and lean proteins in their as close to natural as possible forms are healthy. Adding chocolate chips and sugar and/or artificial sweetener to everything does not make it healthy. I enjoy some of these recipes, but it is misleading (especially to youngsters or people with no real background in nutrition to call every dessert and treat on this site healthy. Lower-guilt? Sure. “Healthy?” No.
Especially if they are subbing these treats into their diets instead of macro and micro-nutrient rich foods due to calorie control.
Also, I dislike a lot of foods, with no particular trend. Being picky+being vegan+being intolerant/allergic to a bunch of foods really narrows my food list. I’m trying my hardest to eat more of the things I’m picky about, especially coconut because of how much it’s in your fabulous desserts! I guess I’ve never tried avocados, but I like mushy textures and tend to have an overly sensitive sense of taste and smell, so maybe I would like them.
Everyone seems to like bananas, but I absolutely cannot stand it. It makes me a little sad, because I would actually like to like it. But it’s not just the smell and taste, it’s also the texture. And I really can’t stand mushrooms, sweetened rye things, most pastas, milk, most meats and all fish except for salmon and all white potatos except for the really new ones. And salad dressing. And a lot of other things that I can’t think ov until I stumble upon them. Being veg*n has helped a lot, but methinks it’ll be a struggle when I move in with my bf, and he likes “normal” food. :S
Do condiments count? I can’t stand mayonnaise! the only way I can stomach it is if I make it at home with olive oil and lemon juice instead of vinegar. Tastes much different than the jarred version. I can’t even stand the veganaisse. Oh, papaya too! Always tastes like vomit to me. And I live in the Caribbean, so you can imagine how often I come across the ghastly stuff.
Haha, I forgot about how vomity papaya tastes until I read this comment. Cantalope too! Blehh! I grew out of my dislike of bananas tho! There’s always hope 🙂
Papaya tastes like vomit to me too. I’ve never found anyone else who agrees with me on this! Is it weird to be excited about that?
I honestly don’t like chocolate. It’s in almost everything on this blog, but I still love hanging around here, because your recipes are so flexible. More non-chocolate recipes, please 🙂
