Shhh… they’re actually healthy chocolate bunnies.

Here, let me introduce you. This is Simon:

Oh, and the guy in the middle is not made of white chocolate. (Blech! White chocolate!) He’s made of coconut butter. For both the chocolate and coconut bunnies, you’ll need to keep leftovers in the freezer. (Snow bunnies?) If you’d prefer homemade chocolate Easter bunnies that keep their shape at room temp, simply melt your favorite chocolate chips and pour that into your bunny chocolate molds.

    i’m hoping for dark chocolate…but it’s a pretty safe bet since the easter bunny understands that’s about the only “candy” i’ll eat. unless he wants to start reading your recipes…then i’d kill for some of the peanut butter eggs 🙂

    I just want to see my best friend who goes to school in Kentucky- I spend every Easter with her & her family! It’s so nice of her family to allow this Jewish girl to share their holidays with them & allow me to be a part of the family!     I want an Easter basket full of everything needed to make vegan chocolate treats; cocoa nibs, cocoa powder, stevia, cocoa butter, coconut oil and butter, dried fruits, raw nuts… (I have all of this in the house, but hey, I make soooo many chocolatey things, I could always use a back up supply!) I hope the Easter Bunny is strooooong! Oh, and a bunny mold OF COURSE! : )

    I grew up in Germany, and Easter is a pretty big deal over there. As a kid my favorite thirsty of Easter were these amazing caramel bunnies. The caramel just melted in my mouth and was literally the best thing ever. I picked those over chocolate any time. (and I’m quite a chocoholic.) I’ve been vegan for a few years, and ive beyond mastered making caramel but Ive never tried making those yummy bunnies. Hmmm maybe I should get a bunny mold myself just to try. Damn those delicious treats! Ohhh I imagine they’d be even better with like the ears dipped in chocolate or something. 🙂
