Delicious homemade vegan apple pancakes for a healthy plant based breakfast that tastes like hot apple pie!

These apple pie pancakes are extra fat and fluffy.
The recipe serves one person, or it can easily be multiplied to feed a family.
If you want to throw caution to the wind, try serving the pancakes à la mode at least once in your life!

The recipe was adapted from my Vegan Blueberry Pancakes and these Vegan Pancakes.


Vegan Apple Pancakes
Ingredients
- 1/3 cup flour (or try these Keto Pancakes)
- 2 tbsp rolled oats
- 1/2 cup finely-chopped apple
- 1 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1 tsp pure vanilla extract
- 1 tbsp sugar or pinch uncut stevia
- 1/3 cup milk of choice or more for thinner pancakes
- Unless you like the taste of fat-free pancakes add 1 tbsp oil (coconut oil is delicious here!) or buttery spread, and reduce milk by 1 tbsp
Instructions
- *I've tried the following flours successfully in this recipe: whole wheat pastry, white all purpose, whole grain spelt, or gluten free all purpose. Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup or ice cream of choice (my absolute favorite ice cream recipe is linked under the second photo in this post). Or cut up more apple, sprinkle with cinnamon (and perhaps some sweetener), and boil to make an apple compote.*Nutrition facts will be almost identical to those of my Pineapple Upside Down Pancakes*

This was so good! The perfect fall breakfast. I used spelt flour and coconut oil, both of which I had never tried before and I think it makes a big difference.
Hiii Katie! I calculated this recipie with 275 calories and 2.5 grams of fat using Unsweetened Vanilla Almond Milk, no oil, and the sugar! Hope I helped! 🙂

Also, if you want to add coconut oil, but not a whole tablespoon, it works to add a teaspoon of coconut oil and just take a teaspoon of milk out.

These are so delicious! I’ve been wanting to make them for a while, and they were worth the wait. They really do taste like apple pie, especially with ice cream on top. I cooked mine in butter and added a little brown sugar to the mix 😉

I made these yesterday morning, and I spent the rest of the day telling people about the awesome pancakes I had for breakfast. This morning I was about to make the exact same thing since I have an abundance of apples, but then I noticed an open can of pumpkin puree in the fridge. I used 1/4 cup pumpkin instead of the 1/2 cup apple and left everything else exactly the same. They are a little gooey in the middle but still GOOD! Do you have any suggestions for making a better PUMPKIN pancake?

Alternatives:
I subbed oats for 2 tbsp chia seeds (I’m intolerant to oats), 1 tsp of splenda for the sugar (still on the hunt for a good stevia, will try nunaturals!), 1/2 cup grated apple (squeezed out the juice before). they turned out SO fluffy and moist, I was surprised because I added no oil. Maybe it was because there was some extra moisture from the grated apples.

Hi Katie! I tried making these, I followed the recipe exactly except i used vanilla powder and added both milk and oil without cutting back on the milk. I only got pancakes about the size of big oranges (not in height) And they got very thin. I cooked them for so long but they were still liquidy in the middle. They were still delicious though. But what could I have being doing wrong? 🙂

Are you making them too big? Try making smaller pancakes so the outsides don’t cook before the insides get a chance to finish.
I made these this morning. I used ww pastry flour… and 1 tablespoon xylitol plus about 10-15 drops stevita for the sugar. I also added 1 teaspoon apple cider vinegar per batch (I doubled the recipe) because I find vinegar usually makes for a less dense pancake. I pulsed peeled and roughly chopped Granny Smith apples into a fine chop in the food processor. I also used flax seed oil for the fat portion. I used my leftover chopped up apple in the syrup, which I added a bit of cinnamon and earth balance to and cooked on the stove while the pancakes were going. I served with vanilla ice cream and the cooked syrup. I thought they were delicious. My family said they prefer my plain or blueberry pancakes. My two year old refused to eat these…lol. I guess they are pancake purists. But, again, I tried them and I thought they were very good.

I had some leftover apples from making a pie, so I used one for this recipe- yum! I’ve only tried to make pancakes a couple times before with no success (too undercooked inside as I never know when they’re ready) but after burning the first one of this batch, I turned the heat down, kept a close eye on the edges of the next one and for bubbles forming in the middle, and the rest came out great. I’m honing my pancake-making skills, and this recipe was definitely a great one to cut my teeth on (and in general)! In fact, I’m making these again tomorrow… only to make sure I really know how to make pancakes now, of course 😉
I made a batch of these substituting carrot for apple….yum! Added some raisins, too!

I made a few adjustements, like, 3//4tbsp of coconut oil, 2tsp of sugar, I also made my own topping. I used the other half of the apple and stuck it in a blender, then added a bit of water and cinnamon. I drizzled it on the pancakes and it was perfect guys. let me tell you. you need to try it. ok!
