Pancake Roll Ups


For most people, mornings are so rushed that they’re lucky if they can find time to gulp down a Carnation Instant Breakfast shake. But every now and then, life surprises you with the gift of leisure. The following is a recipe for one of those rare mornings:

Waffles are so last year.

French Toast?  Who’s that? It’s time to make room for the new kid in breakfast:

Pancake Roll Ups!

Above, Carrot Cake Pancake Roll Ups, filled with raisins and Healthy Cream Cheese Frosting, covered with carrots and more raisins and frosting.

Step One: Cook up your pancakes, a bit thinner than usual. In the photos, I used 24-Carrot Cake Pancakes.

Step Two: Top each pancake with lots of yum-licious ingredients

Step Three: Roll up the pancakes. Side note: I *heart* the cute strawberry plate from Pier One.

Step Four: Put more deliciousness on top!

Step Five: Devour your Pancake Roll Ups before other members in your house see them and beat you to it!

    My favorite quick breakfast is slices of break with a nut butter and any type of fruit on top with a little sugar or cinnamon! YUM!!

    My favorite quick breakfast is a toasted whole wheat english muffin spread with a nut butter, topped with banana slices, and sprinkled with cinnamon.

    I don’t understand the “don’t have time for breakfast” thing either… I eat giant breakfast and still hungry for a mid morning snack + lunch + afternoon snack + dinner + late night snack. Fastest breakfast known to man: A whole wheat pita or tortilla, gobs o’ peanut butter and a banana or apple. perfect

    Answer to the second question of the day (and shamelessly, in order to enter the draw…!) 🙂
    No morning is ever too rushed for breakfast! When I had a general anaesthetic a while ago, I got up at 6am so I could have breakfast before the six-hour nil by mouth rule… (Then went back to bed.)
    But if it was really late, I’d have an Eat Natural bar.
    I don’t know if they sell them in America but they’re just whole nuts with dried fruit, a bit of puffed rice, nuts and a dark chocolate or creamy coating, or plain. Healthy and mmmmmmmm…

    For super quick (and portable), I’ll grab a GNU Flavor & Fiber Espresso Chip bar and an apple. Otherwise, it is a bowl of cereal with almond milk – and that is pretty fast too, just not as portable!

    Growing up I couldn’t stand the taste oatmeal and now I can’t get enough of it, go figure. I was a simple jam and toast gal, now I shudder at the thought of so little!

    I very rarely have a rushed morning because breakfast is a priority to me so I make time for it. A healthy, filling breakfast is crucial to my happiness/productivity every day :). But if I’m short on time, I have a big bowl of cereal with banana in. Honestly though, that wouldn’t hold me over very long. Breakfast is usually my biggest meal of the day!
