Pancake Roll Ups


For most people, mornings are so rushed that they’re lucky if they can find time to gulp down a Carnation Instant Breakfast shake. But every now and then, life surprises you with the gift of leisure. The following is a recipe for one of those rare mornings:

Waffles are so last year.

French Toast?  Who’s that? It’s time to make room for the new kid in breakfast:

Pancake Roll Ups!

Above, Carrot Cake Pancake Roll Ups, filled with raisins and Healthy Cream Cheese Frosting, covered with carrots and more raisins and frosting.

Step One: Cook up your pancakes, a bit thinner than usual. In the photos, I used 24-Carrot Cake Pancakes.

Step Two: Top each pancake with lots of yum-licious ingredients

Step Three: Roll up the pancakes. Side note: I *heart* the cute strawberry plate from Pier One.

Step Four: Put more deliciousness on top!

Step Five: Devour your Pancake Roll Ups before other members in your house see them and beat you to it!

    On a rushed morning I like to either grab a Larabar or quickly mush a banana on a piece of toast. Delicious. 🙂

    My favorite, instant breakfast that I like to make when I am in a hurry is a yogurt, and toast spread with peanut butter!! It’s fast, easy, and totally nutritious!!

    My fav quick breakfast would be overnight oats, eaten cold! However, if I didn’t plan ahead my favorite quick breakfast would have to be a banana and soy yogurt.

    If I’m truly rushed and need an instant breakfast, I will grab a piece of fruit from the counter (such as a banana or peaches or some fruit from the fridge (I loooove cold apples and oranges!!) I then make up for the calorie and nutrient deficit when I get to wherever I needed to be in such a hurry 🙂

    When I’m in a hurry, I grab a couple of pieces of fruit or half a melon or papaya. 😀 Sometimes I make a blenderful of smoothie and save half for the next morning if I know that I will be leaving the house early. Chia pudding is also easy to prepare the night before and I can take it with me to work.

    I like trail mix baggies: I throw some nuts, dry cereal, and dried fruit into a ziploc and run out the door. Also, pb and j sammies!

    Ooh, I hate eating in a hurry! But if I absolutely have to… instant oats w/ a dollop of PB. I eat stovetop oats everyday, so I like to stick w/ the same meal, just a wee bit modified. fingers crossed!

    I have to say I LOVE making a fast green smoothie to throw into a water bottle! I just throw spinach, milk, protein powder, a banana and flax seed in a blender, then add some ice and I’m on my way! Of course, I do have to put it in a dark colored water bottler, because I imagine the color of my yummy smoothie might give some people stomach-aches! It’s perfect to take with me to class in the morning when I’m running behind.
