Pancake Roll Ups


For most people, mornings are so rushed that they’re lucky if they can find time to gulp down a Carnation Instant Breakfast shake. But every now and then, life surprises you with the gift of leisure. The following is a recipe for one of those rare mornings:

Waffles are so last year.

French Toast?  Who’s that? It’s time to make room for the new kid in breakfast:

Pancake Roll Ups!

Above, Carrot Cake Pancake Roll Ups, filled with raisins and Healthy Cream Cheese Frosting, covered with carrots and more raisins and frosting.

Step One: Cook up your pancakes, a bit thinner than usual. In the photos, I used 24-Carrot Cake Pancakes.

Step Two: Top each pancake with lots of yum-licious ingredients

Step Three: Roll up the pancakes. Side note: I *heart* the cute strawberry plate from Pier One.

Step Four: Put more deliciousness on top!

Step Five: Devour your Pancake Roll Ups before other members in your house see them and beat you to it!

    Toasted Ezekiel with Earth Balance and/or fruit spread! Or overnight oats if I know it’s going to be a rushed morning .. 🙂

    If i’m in a rush i’ll grab and apple and a hardboiled egg. But i’m a fan of taking time for breakfast. I don’t like to be rushed.

    Honestly, I’ll just eat a nutrition bar and maybe a piece of fruit… Of course, I often eat this when I’m not rushed as well, because I can never think of what to eat. I’m sick of oatmeal, too lazy for pancakes or anything cool and delicious.
    But it works!

    If I am in a huge rush, I will usually just grab a banana and whatever healthy bar I have lying around.

    I work for several schools as a Speech Pathologist. Since I LOVE my sleep so much, I usually eat my breakfast in my car on the way to my first school. My go to breakfast this year are Larabars, preferably Cherry Pie, Peanut Butter Cookie or Key Lime Pie(MY FAVORITE!).

    I know its not considered a breakfast food. But if im in a hurry i love tossing a bunch of veggies in a steamer bag, nuke it for 5 minutes and off we go!
