Pancake Roll Ups

For most people, mornings are so rushed that they’re lucky if they can find time to gulp down a Carnation Instant Breakfast shake. But every now and then, life surprises you with the gift of leisure. The following is a recipe for one of those rare mornings:

Waffles are so last year.

French Toast?  Who’s that? It’s time to make room for the new kid in breakfast:

Pancake Roll Ups!

Above, Carrot Cake Pancake Roll Ups, filled with raisins and Healthy Cream Cheese Frosting, covered with carrots and more raisins and frosting.

Step One: Cook up your pancakes, a bit thinner than usual. In the photos, I used 24-Carrot Cake Pancakes.

Step Two: Top each pancake with lots of yum-licious ingredients

Step Three: Roll up the pancakes. Side note: I *heart* the cute strawberry plate from Pier One.

Step Four: Put more deliciousness on top!

Step Five: Devour your Pancake Roll Ups before other members in your house see them and beat you to it!

Peanut butter, cinnamon, and raisin sounds like the perfect pancake roll up! I can’t afford coconut butter, but that would be in close second 🙂

Genius! I think my roll-ups would have to include pumpkin or maybe some coconut butter:)

Hey there! Those pancake roll ups look so AMAZING!!! I already want to try them!! 😉 Maybe I will try them this week as I am supposed to be cooking pancakes for a friend on Wednesday morning. Mmmm…

It has been so long since I have been blogging and I missed how things turned out for your raising funds for clicking on your site. I’m sorry but I can’t remember what it was for but I remember you doing it and I was just wondering how everything turned out.

    hi katie!
your blog is fabulous and i really appreciate the effort you put into it day in and day out! i was wondering what kinds of food you eat on the go, say in class or for car rides (could make a great post!). as a vegetarian i find it somewhat difficult to make a healthy well rounded meal out of portable foods. also, has anyone ever told you that you look just like emma roberts?? you are identical, and equally, if not more gorgeous! hope all is well 🙂

YUM!! I think anything with coconut would be good in those. Maybe coconut butter and bananas.

Yum! This looks like a perfect breakfast item, especially for the mornings when you don’t want too much sweetness to it. The mounds roll ups sounds incredible too.

From childhood, I always loved banana chocolate chip pancakes (my mommy’s specialty), so I’d love to make those into roll ups. Blueberry with cream cheese and roasted pecans would be incredelicious too, though! Mmmm, I really don’t make enough pancakes!

YUM! I can’t wait to make these! I’m not sure about details, but mine would involve nut butter and probably chocolate is some form. 🙂
