Mint-Chocolate-Chip Fudge Pops


Roses are red.

Mint-Chocolate Fudgsicles

Just 5 ingredients…

with a secret healthy ingredient!

  • 1 cup plain or vanilla yogurt of choice, or 1 cup full-fat canned coconut milk (I used Silk soy yogurt, and Wholesoy works too. I’m sure many other brands work, but I’ve only tried these pops with the two brands mentioned.)
  • 1/16 to 1/4 tsp pure peppermint extract (or more), depending on desired mint strength
  • 1/4 tsp pure vanilla extract
  • 1-3 stevia packets or 1-3 tbsp sugar or liquid sweetener of choice (Sweetener amount will depend on your choice of yogurt, as well as your personal taste preferences. Remember that the pops will be less sweet once frozen.)
  • scant 1/16 tsp salt
  • optional: packed 1/2 cup spinach (20g), or food coloring as desired (The pictured pops have spinach, not food coloring. You cannot taste it at all!)
  • optional: handful of chocolate chips or mini chips

If using spinach, blend all ingredients until completely smooth. (If not using spinach, combine all ingredients in a large bowl or pyrex measuring cup.) Pour into popsicle molds, or paper cups with spoons as the sticks. Freeze completely, then pop out and enjoy.

My chocolate chips all wanted desperately to sink to the bottom: To avoid this, you can fill the pops 1/2-way up first and freeze. Then fill the rest of the way. Or…

What flavor popsicles should I make next?

There’s still half a big container of Silk yogurt in my fridge, begging to be used. At first, I was thinking pumpkin pie. But really, who wants to see pumpkin popsicles in the middle of June? So maybe chocolate-chip cookie dough? Or a fruit-based flavor… Strawberry Shortcake Popsicles? Or Piña Colada?

    I’ve been scouring the Internet for some more grown-up flavored popsicles. I don’t drink, so I’m not meaning alcoholic ones. I mean more like ones ingredients like green tea, fresh mint, ginger, papaya, kiwi, honey … The “outside-the-box” flavors.

    Some healthy pudding pops would be nice. I made the kids some from Jell-o pudding mix. Later I got to thinking about all the sugar and wondering what the gelatin was derived from. Eating cow and horse bones doesn’t sound tasty.

    Just made these for myself this afternoon. Had one after dinner. I didn’t think to chop the spinach first. I could have blended it longer too. Other than that, they were fab! Which simply means operator error ; ) Thinking that I may just freeze it in a small tupperware container next time though. I could not get them out of my sons icepop mold! I sat there with a spoon just scraping it out. Lol
    Thanks, as always, for the yummy and healthy food! You are making my transition so much easier. Milk allergy is not fun, at all.

    So…I have pinned so many of your recipes and haven’t tried any – until now. I was just really skeptical that something good for you could be healthy, too, since I love baking with “real” ingredients. Also, I don’t always have the ingredients for all of your recipes (which I’m going to have to remedy).

    I saw this in a “You might also like…” and I am so glad you add that to the end of blog posts b/c mint and chocolate are my favorites, hands down. I made these pops tonight with the hot chocolate butter sauce magic shell amazingness…holy cow. I’m only sorry I haven’t tried some of your recipes sooner!

    Just made these, with fresh mint and no chocolate (sorry!) instead and they turned out so good! I think some type of layered pops would be super cute, like peaches and cream layering the orange peach part, then the creamy part, then another layer of peach… or red white and blue for July 4th, like those “rocket” pops 🙂 Thanks for the great inspiration as always!
