Mint-Chocolate-Chip Fudge Pops

Roses are red.

Mint-chocolate fudge pops are green.

That doesn’t rhyme.

But really, who cares?

It’s too early for poetry anyway.

But not too early for fudge pops.

No, never.

Mint-Chocolate Fudgsicles

Just 5 ingredients…

with a secret healthy ingredient!

  • 1 cup plain or vanilla yogurt of choice, or 1 cup full-fat canned coconut milk (I used Silk soy yogurt, and Wholesoy works too. I’m sure many other brands work, but I’ve only tried these pops with the two brands mentioned.)
  • 1/16 to 1/4 tsp pure peppermint extract (or more), depending on desired mint strength
  • 1/4 tsp pure vanilla extract
  • 1-3 stevia packets or 1-3 tbsp sugar or liquid sweetener of choice (Sweetener amount will depend on your choice of yogurt, as well as your personal taste preferences. Remember that the pops will be less sweet once frozen.)
  • scant 1/16 tsp salt
  • optional: packed 1/2 cup spinach (20g), or food coloring as desired (The pictured pops have spinach, not food coloring. You cannot taste it at all!)
  • optional: handful of chocolate chips or mini chips

If using spinach, blend all ingredients until completely smooth. (If not using spinach, combine all ingredients in a large bowl or pyrex measuring cup.) Pour into popsicle molds, or paper cups with spoons as the sticks. Freeze completely, then pop out and enjoy.

My chocolate chips all wanted desperately to sink to the bottom: To avoid this, you can fill the pops 1/2-way up first and freeze. Then fill the rest of the way. Or…

mint chocolate pops

I just gave up and covered them in chocolate!

The chocolate coating is this recipe: Hot Chocolate Butter.

Question of the Day:

What flavor popsicles should I make next?

There’s still half a big container of Silk yogurt in my fridge, begging to be used. At first, I was thinking pumpkin pie. But really, who wants to see pumpkin popsicles in the middle of June? So maybe chocolate-chip cookie dough? Or a fruit-based flavor… Strawberry Shortcake Popsicles? Or Piña Colada?

Yummy! I’d love to see a bananas foster popsicle, or pumpkin cheesecake 🙂

Spinach! I LOVE IT! You are such a hit in our house, Katie Doll! My girls sort of idolize you! Did you know you’re a role model for the “healthy-eating-tween” set? Thanks for all your hard work! My family benefits from you!

    1. Chocolate-Covered Katie says:

Stephanie, that really (really) means a lot to me. Thank you!!!

  4. Samantha says:

I am on such a mint chocolate chip kick I can’t wait to try again. I am loving all the cookie related requests!

PS…link of the day is a great idea! Not sure if you are trying it out or it will be a new feature. I haven’t had time to make those cupcakes (on the list) so finally I did the single lady chocolate + extract + chocolate chips to get me through (and to eat with the ice cream).

    1. Samantha says:

By the way, thanks for the mention of the popsicle mold. I love hearing about the companies out there doing good. I went to their site and that was a really touching story.

Hehe, it really never is too early for a fudgcicle, I frequently eat them on summer mornings when I wake up burning up…
As for flavors, a pumpkin pie popsicle sounds stupendous!

    CHOCOLATE CHIP COOKIE DOUGH!!!!!!!

  8. Anonymous says:

Would greek yogurt work with this, you think?

    1. Alanna says:

I bet it would — I’ve used Chobani plain to make frozen yogurt before! I’ve never had vegan yogurt so I’m not sure how it compares flavor-wise, but you can always sample and add more sweetener before freezing if necessary.

  9. Lexi @ You, Me, & A World to See says:

Mmmm yum! I vote chocolate chip cookie dough for sure. A staple of college students, for sure 🙂

  10. Alanna says:

These sound so yummy and easy! I love the idea of a peach, orange cream, or black raspberry flavor. As a side note, I can’t figure out how you got the one popsicle to stand up for the last two pictures! Haha.

    1. Chocolate-Covered Katie says:

I actually put a cup behind it and then photoshopped the cup out! It was hard to photoshop out, but it was certainly easier than getting the pop to stand up on its own.

P.S. Going to Whole Foods today for your nut butters! 😉

      1. Alanna says:

lol too funny; I thought maybe you’d carefully propped it up with another popsicle stick, but Photoshopping was probably easier! And yay on the nut butters! 😀

  11. mandy says:

Interesting recipe, to say the least. Bet it would be better w/ a banana blended in! But that might be too sweet? Not sure- You’re the master mind!!! What do you think?!

  12. Brin says:

You are soo talented! I’m 12 and a big fan! these would be awesome in ice cube tray with tooth picks for mini pops!!!( I have made over a dozen of your recipes or will;) and I haven’t found one I did not like)!!!!

    1. Chocolate-Covered Katie says:

Aw thanks, Brin. I love your idea!

  13. Sally @ sally's baking addiction says:

LOVING this recipe Katie! As I sit here eating a no sugar added fudgsicle.. I could be eating a MINT fudge pop with no artificial sweeteners or other gunk. Gotta make these.

  14. Rachel says:

My 6 yr old votes you do chocolate chip cookie dough!

  15. emily ran says:
