As if I needed yet another addictive no-bake recipe on the blog.

Oh but one can never have enough no-bake recipes, right?

Especially when there is coconut involved.

You know what else one can never have enough of?

Obviously I would say chocolate.

The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.

My sister would probably say shoes. Although she might say nailpolish.

She really does have a lot of nailpolish.

Except maybe my crazy boyfriend who just yesterday informed me that he doesn’t like coconut.

I think I stared at him blankly for over five minutes, trying to comprehend that statement.

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.

Oh, and puppies… I can’t go into Petsmart on adoption days for fear of taking home all the rescue puppies!

No-Bake Coconut Bars

These easy no-bake coconut bars can be made in under 10 minutes.
Total Time: 5 minutes
Yield: 6 – 8 bars

Ingredients

  • 1 cup unsweetened shredded coconut (80g)
  • 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
  • 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt
  • optional mini chocolate chips

Instructions 

  • Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Can be stored in the fridge or freezer, for at least a few weeks.

    my fiancee and I dont like the coconut texture… idk why but with the coconut is crispy like it’s been backed in the oven, I can handle it but my fiancee still can’t…

    these would be so good if you made them really small and thin, like sweet cracker-like things, and serve them like hors d’oeuvres with a swirl of fruit-flavoured whipped coconut cream on top, maybe with some fresh fruit, chopped nuts, or a drizzle of chocolate on top. these have great possibilities! now i just have to go throw an appetizer party…

    Made these tonight. I made them a little thin so they fell apart just a bit but they are delicious!!! I am going to try them with a tad more coconut oil and drizzle with melted dark chocolate. Then they will be a yummy homemade Mounds bar!

    LOL, what is wrong about people liking/ or not liking different things! Nothing so don’t be mean! My boyfriend hates coconut but I love it. Also he likes chicken livers which make me want to hurl! What, should we break up because of it! I will try that crack bars for me , it sound like something to get BUSTED for! and make him a different surprise not coconu!.

    Now all you must do is to put ground up almonds in there and dip the end in chocolate and you have a even nuttier chocolate yummy scrumptious bar!

    I finally made these today and wow! I altered them a bit. I decided I wanted to toast the unsweetened coconut first so I did that and then rolled the mixture into balls. I made the chocolate sauce you used on the “reeses eggs” and coated the coconut balls in the chocolate. Heavenly!!! I doubled the recipe but added a bit less than double the maple syrup and they were great! Thank you for the great recipe!!!

    Just made these. They turned out much better than I was expecting. Used honey because I didn’t have any maple syrup. Even my kids liked them, although they did dip them in Nutella.
