As if I needed yet another addictive no-bake recipe on the blog.

Oh but one can never have enough no-bake recipes, right?

Especially when there is coconut involved.

You know what else one can never have enough of?

Obviously I would say chocolate.

The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.

My sister would probably say shoes. Although she might say nailpolish.

She really does have a lot of nailpolish.

And one can never have enough coconut.

Except maybe my crazy boyfriend who just yesterday informed me that he doesn’t like coconut.

I think I stared at him blankly for over five minutes, trying to comprehend that statement.

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.

Oh, and puppies… I can’t go into Petsmart on adoption days for fear of taking home all the rescue puppies!

No-Bake Coconut Bars

These easy no-bake coconut bars can be made in under 10 minutes.
Total Time: 5 minutes
Yield: 6 – 8 bars

Ingredients

  • 1 cup unsweetened shredded coconut (80g)
  • 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
  • 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt
  • optional mini chocolate chips

Instructions 

  • Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Can be stored in the fridge or freezer, for at least a few weeks.

    Nobody has posted on this in almost a year, and I don’t have time to read all the comments, but just in case: DO NOT mix this by hand! It completely ruins the structural integrity of the bars!
    Delicious, though, amazing! I made these today and since I’m not low-fat (just sugar/carbs) I used the stevia option and coconut milk instead of water. YUUUUUM!

    I made these last night, I couldn’t find any unsweetened coconut so I used sweetened and 1/4c water (no extra sweetener). I think I will keep my eye out for unsweetened coconut though because they did not come out right, they fall right apart. Like other commenters, I also found they only filled about 1/2 – 2/3 of a loaf pan. They taste so good though, a really fresh coconut flavor! (I hate sunscreen tasting coconut things!). I will definitely make again once I find the right coconut..

    I made these and melted dark chocolate and drizzled on top. First, I was weepy sad that the bars are tiny…so I tripled the batch. Secondly, my bars were ultra crumbly as in, pick it up, feel it crumble’ crumble. Is this normal? I liked that the bars weren’t silly sweet and they were yumm. Just crumbly yum”

      Did you use a food processor? And squish down very hard and use virgin coconut oil?

    I have been wanting to come up with a low carb Mound like candy. Cover this in a thin coating of Lindt 85% dark chocolate and Walla! I am so excited. I am eating low carb to control my diabetes and this will sure make it more enjoyable.

    I made this the other day but could only find sweetened coconut. Instead of using a full 1/4 cup of agave nectar I used about 1/8 cup and watered it down to make 1/4 cup. I also melted chocolate for the top. They taste great but they didn’t really stay together. I was able to find regular unsweetened coconut at the store so I will try again with the unsweetened coconut and hopefully they will come out better. The taste was awesome, just very messy to eat as is! I’m guessing there is something in the coating on the sweetened coconut that prevents it from staying together.

    Katie, I loved this post!!! Cause I also can never have enough coconut (or makeup, shoes or nail polish…but that’s another story!) I loved your comment about staring at your boyfriend blankly for 5 minutes after he said he didn’t like coconut! My first thought was, “Who in their right mind doesn’t like Coconut?!” Well, I’m off to make these things… they just look too darn good!

    I made these today!!! I added more coconut and after they cooled drizzled melted dark chocolate over them and sprinkled chopped almonds. It was a homemade almond joy!!!

    I agree, it must be a male thing. My husband didn’t like it until I got him to try it different ways. My dad doesn’t like it except caramelized on oatmeal cake. My pap doesn’t like it, my brother doesn’t like it. I love coconut. And these bars are awesome. I didn’t feel like dirtying the food processor so I mixed them by hand, but I couldn’t find unsweetened flaked coconut so I got sweetened and omitted any other sweetener. I also omitted the water, just using the oil, extract, and salt. These bars are fantastic!!
