These no-bake coconut bars are completely irresistible – and you can make them in under 10 minutes!

As if I needed yet another addictive no-bake recipe on the blog.
Oh but one can never have enough no-bake recipes, right?
Especially when there is coconut involved.
You know what else one can never have enough of?
Obviously I would say chocolate.
The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.
My sister would probably say shoes. Although she might say nailpolish.
She really does have a lot of nailpolish.

Except maybe my crazy boyfriend who just yesterday informed me that he doesn’t like coconut.
I think I stared at him blankly for over five minutes, trying to comprehend that statement.

You know, I also once dated a guy who didn’t like chocolate… 😕

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
InstructionsÂ
- Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Can be stored in the fridge or freezer, for at least a few weeks.View Nutrition Facts






















Can you substitute honey for agave or syrup?

Wow, these are so delicious! I mixed mine by hand (literally ) and used part butter for the coconut oil (just cuz I love butter), also used honey as that’s what I had on hand. Can hardly wait until they’re chilled! Thanks for a super easy and tasty recipe using coconut oil!

Would coconut butter work as well as coconut oil? I’ve never used the oil but I do have some artisana coconut butter on hand.

I made these the other night and the consistency was perfect! Only thing is that they were much too sweet for my taste. Could it be because I substituted the 1/2 tsp vanilla extract for more maple syrup? (Read that you can use a 1:1 substitute for those 2 ingredients)
Next time..to make it less sweet…would I just use less maple syrup and replace with water ? 🙂 Thanks for the great recipe!

I have made these, but shape them into balls or bars, then cover in chocolate! Homemade mounds. They were gone so fast! *My husband actually loves coconut, but hates cake.

I’m making this TONIGHT!!! I think I might use coconut butter instead of coconut oil. Would that be okay?
My son and sister hates it too; something about the texture? I think they are smoking crack.
Whenever I make these, they end up coming out really thin and small compared to yours, they dont look like a bar at all! What am I doing wrong?
I just made these tonight, but used raw honey for the sweetener. They were really good! I also made a second batch (shows how easy they are!) but used 1/4 cup of raw unsalted almond butter and 2 tbsp of raw honey. So yummy! Thanks for sharing 🙂
These are by far my favourite snack to make! Since stumbling across your page a couple of months ago, but freezer has basically not had a day without housing these! I run out, I made more straight away. They are always my go-to snack when I crave something sweet.
I’ve recently been making them with the 1/4 Cup of water instead of agave/maple etc, and adding some lemon juice in them. They taste just like a sugar filled coconut-vanilla slice from a bakery. Amazing.
