These no-bake coconut bars are completely irresistible – and you can make them in under 10 minutes!

As if I needed yet another addictive no-bake recipe on the blog.
Oh but one can never have enough no-bake recipes, right?
Especially when there is coconut involved.
You know what else one can never have enough of?
Obviously I would say chocolate.
The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.
My sister would probably say shoes. Although she might say nailpolish.
She really does have a lot of nailpolish.

I think I stared at him blankly for over five minutes, trying to comprehend that statement.

You know, I also once dated a guy who didn’t like chocolate… 😕

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.
Oh, and puppies… I can’t go into Petsmart on adoption days for fear of taking home all the rescue puppies!

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
Instructions
- Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. I’ve looked over the recipe a bunch of times, but I can’t see the part where you add the crack. You know, the crack cocaine? The illegal street drug? The highly addictive (just like cookies rofl!) smokeable substance that has devastated entire communities and put a disproportionate number of socially disenfranchised men and women in prison? Such a cutesy name for these coconut bars! Because they’re so delicious (just like yummy crack cocaine! yumz!) that they’re going to put me into a spiral of addiction and violence, right? But, y’know, healthy. Healthy crack cocaine. Seriously.
I can’t thank you enough. I am on a strict diet for health reasons and it’s halloween. This reciepe saved me!
Will this work if I leave out the agave/maple syrup? I am in a sugar detox.
My attempt at this today was too crumbly–even when frozen. I don’t have a food processor, so I thawed the bars and added a 1/2 cup of oat flour. Then made two bars in separate snack size Ziplocs; they were easier to compress that way. Salvaged! 🙂
I tend to make your coconut crack bars for every function I attend where paleo desserts are requested. They are amazing. I’m wondering if you think they would set up ok if I did “scoops” of them instead of pushing them into a pan, cooling and cutting bar shapes. Not too get into too much detail… but they are for a breast cancer fundraiser… figure I could turn little mounds of coconut into, well you know 🙂

Hello chocolate covered katie ! I’m looking this simple recipe and I think I’m going to make it for a friends birthday . I have a question or more like I need your help . I was thinking of adding a pecan base and drizzle some vegan chocolate chips. Does this sound tasty and achievable ? What are your thoughts . Again thanks and I appreciate your opinion.

Maybe this is a silly question, but please bear with me.. I’m new to baking with coconut. I cannot find any unsweetened coconut in my local grocery store but I do have some coconut flour on hand and some sweetened coconut. What would be the better option? To use the coconut flour (which is just finely ground unsweetened coconut, correct?) or would i need to um, wash and dry the sweetened coconut? ?

Found these searching for something to cut my sweet craving. They’re currently chilling in the freezer (and i added some chocolate chips on top — oh yeahh) but i literally wanted to lick the blade as i was cleaning..SO GOOD. i disagree about the serving sizes, i expect to have 8 servings of coconut bar “bites.” It’s just that our perception of serving “sizes” is so skewed nowadays that anything smaller than a deck of cards is seen as too tiny! Nope, perfect size to enjoy a clean treat and kill a sweet craving at the same time 🙂

These do look delicious, but PLEASE would everybody stop using the word “crack” in their recipe names unless they have actually lived through the staggering, desperate pain of crack cocaine addiction. Otherwise you’re just being insensitive and offensive.
