These no-bake coconut bars are completely irresistible – and you can make them in under 10 minutes!

As if I needed yet another addictive no-bake recipe on the blog.
Oh but one can never have enough no-bake recipes, right?
Especially when there is coconut involved.
You know what else one can never have enough of?
Obviously I would say chocolate.
The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.
My sister would probably say shoes. Although she might say nailpolish.
She really does have a lot of nailpolish.

I think I stared at him blankly for over five minutes, trying to comprehend that statement.

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
Instructions
- Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Can be stored in the fridge or freezer, for at least a few weeks.View Nutrition Facts






















Ladies, sorry to burst the theory of “men don’t like coconut”, but I have to. I very much enjoy all things coconut, with the exception of coconut water. Meh…
Anyway, I did make these are they are good. However I had to use my kitchen skills because the coconut ratio was low. Is it supposed to be PACKED COCONUT? Because it’s far too moist for loosely poured coconut. I also added 2 tsp of coconut flour to dry them out just a bit. Also, if these make 6-8 bars, then the portion is for small children or dwarfs, because these are not man sized. I could eat this recipe amount in one easy sitting. Either way it’s good. Thanks!
These REALLY hit the spot for a sweet craving! Thank you for the recipe! I started making the recipe using 1/2 the ingredients and messed up on the coconut oil (too much) so I added a little raw oatmeal to thicken a little and it was still delicious!!! Thank you! 🙂
Have you ever tried doubling or tripling the recipe to get a larger batch?? I have a teenage boy that LOVES coconut and he would polish these off in the blink of an eye.

I’ve been going Paleo for 6 days now and while it has taken some getting use to and my kitchen looks like a fruit & veg stall I am rather enjoying it. I do like sweet & savoury food so I was glad to find this Coconut Crack Bars & made a double batch 1 as instructed & the second with some Cacao Powder. I ended up putting them both in the freezer for 1 hour OMG I am a happy bunny. They are super tasty and just the right sweetness. Next batch I will use a Ice cube tray for portion control.

So I needed my child to eat coconut shreds, as part of a natural remedy we are trying. (Boys, dirt, barefeet – I’m sure other moms of boys have a clue what I’m talking about).

I made a triple batch and everyone went crazy over them. Instead of stevia, I used 2/3 tbsp. PureLo Lo Han Sweetener (made from monk fruit) per batch. I also used seeds from one inch of organic vanilla bean per batch instead of vanilla extract. These are so filling that I made fingers instead of bars and I topped them with cocoa-dusted almonds. Thank you very much for this simple recipe!
What are the nutritional facts on this? Looks delicious!
I love these! I wouldn’t recommend using maple syrup though as there is 53 grams of sugar in 1/4 cup. I think I’ll try Stevia next time.

Do you use fresh coconuts for this recipe, or dried ones?
You use shredded coconut. It comes in a package. Do a google image search to see what it looks like, and hopefully that will help.
