These no-bake coconut bars are completely irresistible – and you can make them in under 10 minutes!

As if I needed yet another addictive no-bake recipe on the blog.
Oh but one can never have enough no-bake recipes, right?
Especially when there is coconut involved.
You know what else one can never have enough of?
Obviously I would say chocolate.
The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.
My sister would probably say shoes. Although she might say nailpolish.
She really does have a lot of nailpolish.

I think I stared at him blankly for over five minutes, trying to comprehend that statement.

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
Instructions
- Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Wonderful recipes, but I wondered why the nutritional info is not on the same page as the recipes?
Love the recipe and use it often. Thank you. And I “crack” is a terrible… not cute or funny name. “Crack” refers (like it or not) to crystal-meth which wrecks lives and kills many.
I made these but did not know how long to process them so I did it until it was well combined. I wanted to put them into an 8″ square pan but it did not even cover the bottom. They did not look at all like the picture. How long did you process them? What did I do wrong?
Process them until they are completely sticky and easily able to smash into the bottom of a pan. So probably longer than you did. If you wanted to do an 8×8 pan, I’d suggest doubling or tripling the recipe.
Coconut is my favorite flavor. I love this recipe. Sometimes I have to hid them from myself or I will keep eating. So good. 🙂
Just made these, love how fast and simple. I added 2 tbsp peanut butter and chocolate chips – love it. Next time I’m doubling!
I am only able to find sweetened shredded coconut at my local grocery store. If I use this, how much would you suggest I change the agave about to?

I haven’t tried this recipe yet, but any no – bake bars that are healthy and few ingredients to-boot is a 5 star for me and if I like it “bonus”!
I added unsweetened cocoa powder to this instead of the chocolate chips and it was soooo delicious!

Just made these and they are the most amazing thing ever! Dangerous to make alone because I would seriously eat the whole batch at once.
These are great. You need a food processor, though. I tried just mixing them, but the ingredients kept separating. Total yum. I used a Chinese takeout container to press them into. Worked nicely and provides storage as well.
Sorry for destroying your theories Ladies shoe and I’m a man and i like coconuts;) Just tried this recipe and it is surely the best thing and eat today. Ofcourse since i’m a man and must have scr * in things over 🙂 well my problem was That it came out this soft (could not make it into bars), maybe it’s because i was too hungry and waited only 20 mins in freezer. or maybe because i did not stick to the recipe since i do not use salt, I did not have anything like vanilla and exchanged agave or maple syrup with coconut milk + Acacia honey but it was still a super tasty! Thanks for great recipe! 🙂
