These no-bake coconut bars are completely irresistible – and you can make them in under 10 minutes!

As if I needed yet another addictive no-bake recipe on the blog.
Oh but one can never have enough no-bake recipes, right?
Especially when there is coconut involved.
You know what else one can never have enough of?
Obviously I would say chocolate.
The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.
My sister would probably say shoes. Although she might say nailpolish.
She really does have a lot of nailpolish.

I think I stared at him blankly for over five minutes, trying to comprehend that statement.

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
Instructions
- Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Can be stored in the fridge or freezer, for at least a few weeks.View Nutrition Facts






















Looooove coconut too! Can you use a Vitamix instead of food processor?
Made these tonight and added 1/2 tsp of almond extract as well. Soooo good!
I left out the chocolate, subbed coconut flour 1:1 for half the coconut, plus added 1/2 cup hazelnuts coarsely ground, and used it as a pie crust for a no-bake chocolate avocado pie!
The two complemented each other perfectly; scrumptious!

As someone who has been devastated by someone’s addiction to crack, I do wish that you (and others who use “crack” as a joke name for a food) would please consider using a different name. Crack addiction is no joke – my children lost their father, and I lost my husband because of it. He abandoned us, throwing away his family and his future. “Crack” has no place in a recipe name – it trivializes the seriousness and the reality of what crack does to families and children. It’s not cute or funny to me at ALL, and I know I’m not alone in this.
I love coconut and these are so good!! My husbands entire family hates coconut. Every single one of them. Guys and gals. When I make these for myself I make my hubby something with peanut butter because he loves it.
I just made these. I added mini chocolate chips and a tablespoon of almond butter. I don’t have a food processor so I mixed them by hand. I rolled them into balls and put them in the freezer. They are SOOO good! My husband loves them too ?
Made these as a “cookie base” for a Memorial Day fruit tart. Pressed a little thin into 8×8 and topped with coconut “whipped cream” and berries. Delish!
Do you melt the coconut oil before mixing everything together?

I’ve made this recipe a few times according to the instructions and they keep not turning out. They fall apart and are too moist. They won’t hold their form as bars. So I tried putting in less of the coconut oil but it still kept breaking apart. Is anyone else experiencing this? Any tips? They taste delicious, they’re just crumbling in my hands so I end up having to eat it with a spoon! Thanks!
Are you processing in a food processor? And are you using virgin coconut oil? Virgin coconut oil hardens when cold, so make sure you’re using that.
oh going to have to make these too! And maybe add some vanilla protein to make it into a pre or post workout snack
Is there a typo in the recipe? One cup of coconut flakes only made a very tiny batch, nothing like what is pictured on this blog. They were delicious but really tiny .
Mine made 6 bars, as indicated in the recipe. Not sure what may have happened–did you check out Katie’s FAQ at the top of her blog? That may offer some guidance.

I just tried these last night and wow! So simple and so good (without being bad). I doubleded the recipe and added a little extra vanilla and coconut oil. I used the liquid stevia I had but only a couple of drops because this was pretty sweet on its own. I will definitely be making this again and again. Great treat for my two year old and the rest of our family. Thank you for sharing this recipe!!

You need to process them fully in a food processor. If you just stir together, they will fall apart.
