These no-bake coconut bars are completely irresistible – and you can make them in under 10 minutes!

As if I needed yet another addictive no-bake recipe on the blog.
Oh but one can never have enough no-bake recipes, right?
Especially when there is coconut involved.
You know what else one can never have enough of?
Obviously I would say chocolate.
The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.
My sister would probably say shoes. Although she might say nailpolish.
She really does have a lot of nailpolish.

Except maybe my crazy boyfriend who just yesterday informed me that he doesn’t like coconut.
I think I stared at him blankly for over five minutes, trying to comprehend that statement.

You know, I also once dated a guy who didn’t like chocolate… 😕

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.
Oh, and puppies… I can’t go into Petsmart on adoption days for fear of taking home all the rescue puppies!

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
Instructions
- Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. What about using coconut flour? It’s just really finely ground coconut flakes, right? I’m not so into the coconut flakes texture, too “waxy” for me. But if I used coconut flour..? I assume it would work because it is technically the same ingredient and would just soak up the liquid of the coconut oil and coconut sugar.. I think I might try this and see if it works out 🙂

I got married last year and I love wedding cake. One day while we were driving around doing wedding preparation tasks my soon-to-be-hubby tells me only eats the cake at weddings to be polite. He really doesn’t like cake that much. What?!?! Like you, I think I stared at him for about 5 minutes while I tried to comprehend what he had just said. He had no plans to not have cake at the wedding (whew!), but what a shocking statement to make a month before the wedding!
I was surprised these really only had coconut! I bet they taste amazing! I love coconut, haha although I can’t imagine anyone NOT liking chocolate!
I want to try this recipe, but I don’t have any coconut oil. I do, however, have a tub of Earth Balance coconut oil spread; do you think it would work if I used that and melted it first?

Well, I’m trying a half recipe of it this afternoon. We’ll see if it sets up; if not, it tastes like it’ll make a fantastic icing for some chocolate cake or brownies. 😉 I’ll report back.
They turned out a little soft, but they did hold up in bars and they taste awesome!

Or chocolate. Definitely chocolate. We made coconut milk chocolate ice cream last night and it’s taking everything I’ve got to not eat it for breakfast! LOL
Yeah but as Katie mentioned in a recent post, research has shown that dessert-style breakfasts can actually be healthy. So you would in fact be better off having the ice cream for breakfast than dessert. Besides, you need more calories at the beginng of the day than at the end.
