As if I needed yet another addictive no-bake recipe on the blog.

Oh but one can never have enough no-bake recipes, right?

Especially when there is coconut involved.

You know what else one can never have enough of?

Obviously I would say chocolate.

The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.

My sister would probably say shoes. Although she might say nailpolish.

She really does have a lot of nailpolish.

And one can never have enough coconut.

Except maybe my crazy boyfriend who just yesterday informed me that he doesn’t like coconut.

I think I stared at him blankly for over five minutes, trying to comprehend that statement.

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.

Oh, and puppies… I can’t go into Petsmart on adoption days for fear of taking home all the rescue puppies!

No-Bake Coconut Bars

These easy no-bake coconut bars can be made in under 10 minutes.
Total Time: 5 minutes
Yield: 6 – 8 bars

Ingredients

  • 1 cup unsweetened shredded coconut (80g)
  • 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
  • 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt
  • optional mini chocolate chips

Instructions 

  • Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Can be stored in the fridge or freezer, for at least a few weeks.

    I love no-bake desserts! I bet these would be REALLY good frozen too!
    I’m sure someone probably already said this above, but I think you can never have enough open jars of various nut/seed butters. My pantry definitely proves that (although I only have TWO right now- an all-time low record for me!). I’m sure that will change within a day. 🙂
    I agree about the dogs too. I restrain myself with two- I am a crazy dog lady!

    It’s funny, I used to be one of those people that didn’t like coconut either! But as I started cleaning up my diet and eating healthier, I grew to like it! Now I don’t know what I would do without coconut oil, coconut butter or coconut sugar! 🙂 These bars are an awesome idea!

    I can never have enough house decor for the seasons!! I couldn’t help myself today with all the autumn decor coming out in all its splendor, I had to buy buy buy!!

    When I got home I made these bars to remind myself that it is, in fact, still summer and I should celebrate it while it is still here. Lately every time I go to Good Earth for my caffeine fix they have this Lemon Lime Coconut Loaf that stares me in the face. I promptly ignore it each time but as soon as I got home with half the java skyrocketing my energy levels I got to work on these bars – and added both lemon and lime zest and a little freshly squeezed juices to the mixture. WOWZA!! Summer in a bar!! Yum! Thanks for the recipe!!

    Hi Katie! I really love your website and your recipes are great. 🙂 I can NEVER get enough of peanut butter and semi-sweet chocolate chips. Literally, I’ll just get a spoonful of peanut butter and then sprinkle it with chocolate chips…then I’ll go back for more and more….I also LOVE ice cream with melted peanut butter on top. Oh my Lord of the Rings – that is SO GOOD!

    I plan to try these tonight, in single-lady serving form 😉 Plan is to combine 2 Tbs coconut, 1.5 tsp coconut oil, and some liquid vanilla stevia drops, then pack it into mini-muffin cups, hopefully it works!

I just made these…. for someone who only eats maple syrup or honey as sweeteners its been hard to find snacks that actually taste good. these bars are ridiculously good. thank you soo much for completing my evening with this tasty healthy snack! Has anyone made them with stevia? think I might try it next time to reduce the carbs even more, even tho the maple syrup really adds a great flavor to the recipe

    i just burst out laughing because after 8 years together i found out my husband didnt like coconut and i also just stared at him not understanding how someone can not like it… it still floors me to this day and makes me sad because what am i going to do make a gigantic coconut cake just for myself?… well i DO want to but don’t want to hear it from him how i ate the whole thing my self in a day or two.lol
