These no-bake coconut bars are completely irresistible – and you can make them in under 10 minutes!

As if I needed yet another addictive no-bake recipe on the blog.
Oh but one can never have enough no-bake recipes, right?
Especially when there is coconut involved.
You know what else one can never have enough of?
Obviously I would say chocolate.
The eleven different types of chocolate bars in my kitchen pantry attest to that. My roommate would say makeup, as her collection could stock three separate branches of Sephora.
My sister would probably say shoes. Although she might say nailpolish.
She really does have a lot of nailpolish.

Except maybe my crazy boyfriend who just yesterday informed me that he doesn’t like coconut.
I think I stared at him blankly for over five minutes, trying to comprehend that statement.

You know, I also once dated a guy who didn’t like chocolate… 😕

I’m also going to throw jeans and bathing suits onto my list, because even with all the ones I already own, I always want to buy more.
Oh, and puppies… I can’t go into Petsmart on adoption days for fear of taking home all the rescue puppies!

No-Bake Coconut Bars
Ingredients
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup, or 1/4 cup water and stevia to taste
- 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt
- optional mini chocolate chips
Instructions
- Combine all ingredients in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5–and refrigerate for an hour before trying to cut. Or freeze for 15 minutes. My brother loved them – and he claims he doesn’t like coconut! They are delicious, maybe just too sweet for my taste. So less syrup the next time. 🙂

I made these today, but threw in a few semi-sweet chocolate chips before I put them in the fridge to chill. (Chocolate – the only thing that could make them better, right?? LOL) They were great. I made them with 1/8 cup of maple syrup, 1/8 cup of water and 1 packet of stevia. Oh, and the chocolate chips as I prevously mentioned. They were really good. Reminded me of a Mound’s Bar (the “don’t” in “sometimes you feel like a nut, sometimes you don’t…”)
OH MY GOODNESS THAT WAS THE FASTEST RECIPE EVER!!!

Is there any way I could use non-virgin coconut oil for this recipe instead? All I have on hand is the non-virgin kind, and it would be quite expensive for me to buy a container of the virgin coconut oil. I’m pretty new to the coconut oil scene, as I have only been an adherent of the Paleo diet for just a few months.
Or, if anyone else reading this comment knows if regular coconut oil would be an acceptable substitute for the virgin coconut oil, would you please let me know?

Hi Heather! I’m not 100% sure, but I think the only major difference between the two is that regular coconut oil has fewer health benefits because it’s undergone additional processing. Virgin oil should smell and taste more like coconut, but my guess is that both would give you a similar consistency in this recipe, even if the flavor isn’t as coconutty. Strange coincidence, my mom came home with two jars of virgin coconut oil she said she was able to buy really cheap.
Guess I won’t have to use the non-virgin stuff for this recipe, after all. 😉

I really enjoyed this recipe. I put them in too large of a container so I had to spread it really thin but the taste was still so delicious. To me they tasted similar to buttery pralines. I also used honey as my sweetener. Another great recipe as always, Katie.

Personally, I can never have enough fruit. I eat a piece of whole fruit at least 2 times a day! Anyway, I’m excited to try these!
Just made up the coconut stuff then formed it into balls and dipped in melted chocolate after freezing. I have a feeling this will be most delicious. They certainly look good. Probably shouldn’t eat them before my husband comes home. There are four each. But there could be three each and that would be cool, right?
I decided to go ahead and experiement since I have 2 bags of reduced fat coconut I bought by accident, and I added an extra tablespoon of oil to add fat. I don’t know how they should taste, but I seriously want to eat the whole pan. AND I made a double batch because my pan was to big and I am going to a cookout tomorrow. Thankfully it is at my in-laws so I can keep these in the fridge. But I would say go ahead and try if your only choice is reduced fat or no crack bars at all!
