What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

Ingredients
- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
InstructionsÂ
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. These were yum and super-easy – thanks! I did the substitution with spelt instead of oat flour and left out the coffee (just because coffee gives me headaches). I think next time I would cut down the sugar – it probably doesn’t need so much without the coffee. The spelt worked fine and there was a lovely texture to them.
I made these last night but they were too oily to hold together. I may substitute half almond butter fir half the coconut oil next time- but on the upside they tasted fab.

Did you put the dough in a plastic bag and form the giant ball while inside the bag? Then chill? If you chill the dough, it shouldn’t be even the slightest bit oily with coconut oil, because coconut oil hardens when cold.
I made these but I don’t know what I did since they look nothing like yours! I measured my coconut oil solid and then melted so I wonder if I should have measured again after I melted. They wouldn’t hold together. I did manage to stop scooping the raw dough into my mouth and bake some. Those turned out really well! There’s no way I would have gotten 20 cookies out of the batch either, I got maybe 11 small cookies. The raw dough was so stupid-ridiculously good I can’t say how much I actually ate before I baked (I baked 8 cookies). So basically, even if you screw it up somehow these cookies are still worth eating the entire batch yourself. I will definitely try making these again to try and get them to look like they are suppose to! I baked at 350F for about 8 minutes
I just read some of your replies about storing it in the fridge. I didn’t do this either so I definitely will next time. I guess the way that I read it was the fridge step was optional, not that I actually needed to do that step before they would hold together. But like I said, they were still so delicious!

I made these Mocha Chocolate Chip Cookies before work this morning. They are amazing. I substiuted teeccino for the coffee and used coconut sugar. I was able to get 16 small cookie out of the recipe. They’d have to have been quarter sized to get any more. These are spectactular!
Made these last night and had one right after my workout today. Yummy! Cinnamon works well in place of the coffee in case you don’t want the caffeine and don’t have decaf on hand like me. I got 15 cookies out of my batch.

Hey Katie, I love your website. I just made the no bake mocha chocolate chip cookies and they are sooo good. I am not a coffee drinker though so i left that out and i used applesauce instead of the oil and honey for the sweetner. I didn’t put any chocolate chips in either. My 3 boys love them too.
