What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

Ingredients
- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
InstructionsÂ
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. It would be great if you added how many servings the recipe makes; then I would know how many times to double it! I quadrupled this recipe and it made a 9×13 pan…. a perfect amount to last as treats for my kids for a few days.

I used old fashioned oats and it was great. I also used less xylitol, way too sweet. And this is the second time I’ve made them and got 14. I got less last time. They are very small, smaller than what I would bake. Not sure how you got 26, but they are really delicious!

These are amazing! I have to say I had no chocolate chips in the house or instant coffee but had the rest of the ingredients. I added sweetened coconut flakes and they are just delicious! I got about 18 cookies from the recipe. This recipe is a keeper! Thank you!

OMG! Words dont describe how fabulous these were! I made acouple substitutions you should try. Instead of mocha, i put peanut butter in, it was fantastic!!! my chocolate was from a godiva bar i got for my birthday, HALLELUJAH! i thought i died and went to heaven! i used palm sugar because that what i had in my house, and you couldnt taste the difference! I love you Chocolate covered katie!!!!!!!!! i will always be a fan 🙂

I had to make these as soon as I saw them. No instant coffee, so I added brewed coffee in place of the water, and I used regular white flour. I made what I considered to be super-mini cookies, but still only ended up with 14- I guess that just means I didn’t make them as teeny-tiny as you!
