What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

Healthy Chocolate No Bakes
Ingredients
- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
Instructions
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. Mine taste divine, but look way more “oaty” than yours. To deal w/the serving size issue, I rolled my dough into a log in plastic wrap and refrigerated it. Then I sliced off cookies. When at room temperature my dough completely fell apart, just crumbled. Any ideas?
Coconut oil needs to stay cold or it turns to liquid.

But just when I thought that these delicious no-bakes cookies couldn’t possibly get any better, I baked them, and the delicious factor has shot up to beyond amazing! I’ve been making transition to healthier eating this summer & I don’t know if I could have survived those nasty sugar withdrawals w/o this recipe – pinned & made like at least a dozen times for me & to share. Sometimes I had zucchini (have to sneak in those greens whenever I can) or flax seeds for extra crunchiness. Hands down best no-bake cookie recipe I’ve EVER tried ! Thanks!
Everyone, stop what you’re doing and make these! I just made these and WOW they are amazing! I used 1/4 cup sugar and I think if I make them again I will reduce by another tablespoon. They are really sweet for my taste. They would be sooo delicious with peanut butter, too! 🙂 I didn’t have baking soda and they were fine without.
