What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

Healthy Chocolate No Bakes
Ingredients
- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
InstructionsÂ
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. Can I make these without coffee?
The flavor obviously would be a little different (just chocolate rather than mocha), but I’m sure they’d still be yummy! You could even use decaf instant coffee if you’re worried about caffeine more than coffee flavor.

Many of the above comments claim to have replaced the coffee with cinnamon. I bet it would be pretty good. Worth a try 😉

These cookies are MUCH better baked. I followed the no-bake recipe, and the dough would not even hold together if rolled into a ball, so I baked them at 350 F for around 8-10 minutes and they came out great.
Anyone made these yet with a different kind of flour subbed for oat flour?

Wow, these are divine. I’m on a calorie restricted diet at the moment so trying to find satisfying yet healthy desserts is difficult.
These are exactly what I need. I’ve tweaked it for what I’ve got at home, got 12 cookies at 92 calories each.
Why do you need baking soda if this is a no-bake recipe?
I haven’t been on here for a while. Stupid college. JK. I need to get back to it though! These look awesome and a lot of your recipes are college friendly which is good because I really miss making my own stuff.
These are amazing! I tweaked it just a little – I only used 2 tbsp of sugar, and I used applesauce instead of oil. Worked perfectly!
