What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

Ingredients
- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
InstructionsÂ
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. OMGoodness! I kept feeling guilty for eating these and then had to remind myself that I didn’t need to!!! I used almond flour instead of oat flour (cuz that’s what I had) and brewed coffee instead of water (cuz I didn’t have instant). Also used coconut sugar and coconut oil. Amazing! Thank you for this chocolate heaven in my mouth!
I doubled the recipe and found them very salty. I think the baking soda amount should have stayed the same, maybe the salt too. This might be common knowledge for more experienced bakers! Also texture-wise I suspect mini chocolate chips would have worked better.
Honestly the healthy deep-dish cookie is my favourite, it might even be my favourite food!

I used rice bran oil and a granulated stevia product in place of sugar. As I was making the mixture into balls and flattening them prior to baking, I thought hmmm that crumby mixture looks like a kind of chocolate granola of sorts…what would happen if I spread the mixture across a baking tray and toasted it as if it were granola? What a decadent breakfast that would be…

I love that these are truly no bake and no stove, or absolutely any actual cooking required lol. I did add about two teaspoons of peanut butter to give it that nutty taste traditional no bake cookies have and also found it helped the dough to stick together better. Totally addicted to your recipes! Seems like I’m trying a new one every other day lol 🙂
I absolutely love these cookies – I’ve made them several times now and they’re so simple and delicious, I could eat them every day. I’ve subbed the water and coffee granules for brewed espresso and it worked just fine. I always make them with coconut oil and Stevia, and I have tried them with applesauce, but I didn’t really like the way they came out. Yet another fantastic creation, Katie, thank you!

I plan to use stevia in place of sugar (I bought the bag specifically for baking); I also plan to use coconut oil (unrefined). Considering this information, what would estimate be on hardening in the fridge?
What would baking directions be?
I’m not sure consuming raw flour of any sort or baking soda is a great idea. Has that been a concern to anyone else?
If we do decide to bake these, what temp and time would you recommend?
Try 350. That worked for me.
You mentioned baking these…any idea how hot the oven should be and for how long should I cook them? I’m thinking 375 for 10 minutes??
You can bake them at 350F. I’m sure 375 would work, too!
