What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

Healthy Chocolate No Bakes
Ingredients
- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
Instructions
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. Hi Katie! I love your recipes soooooooo much & I’m not even vegan but your food blog is my favorite! I was just wondering, do these cookies have the “baking soda kick” that you sometimes talk about? I don’t really like that strong baking soda taste in cookies so I was just wondering if I should scale down the amount in these cookies. Also, I think it would be useful if from now on you would include baking soda measurements in cookies for both people who do like a baking soda kick, and those who don’t (i don’t know if that makes sense??). Just an idea! Anyways keep those amazing recipes coming Katie!
I made these and did not notice a baking soda taste at all. I think you could cut the amount of baking soda in half or just leave it out and these cookies would still be great.

My favorite has to be oatmeal cookies! For some reason, I find oatmeal cookies to be very polarizing…either you really like them or you really don’t! Chocolate chip is a close second!
I’m curious…why use baking soda if you don’t bake the cookies?
In other news, I love chocolate chocolate chip. Frankly, the more chocolate the better. Or coconut chocolate chip. Or those macademia and white chocolate cookies from Tim Hortons, even though they aren’t vegan…I cheat for them!
In previous no bake recipes, it has been said that the baking soda adds flavor. Go figure… 🙂
Oh, that’s a tough one. Cookies are probably my favorite type of desert, so choosing just one is difficult. Texture is more important to me than flavor, so I’d have to say a really dense and chewy ginger/molasses type cookie. Though a close second would be monster cookies (flourless oatmeal peanut butter cookies with chocolate chips and M&Ms in them.)
Mmmm, these look fantastic! I may try them this weekend. My favorite kind of cookie? I used to make oatmeal honey cookies when I was a kid and they were HEAVENLY, but I can’t find the recipe anywhere! I’ve tried a million different ones but none of them taste like the ones I made as a kid. I’ll just have to keep on trying 😛

I love snickerdoodles (if i have to buy them, and i buy cookies like once every two years)
but chocolate chip are amazing – i usually make those at home for the kids (that includes hubby they’re his favorite and kids don’t care)
oatmeal cookies are pretty yum too. mother in law makes them bit dry – which is perfect for my tea addiction (russians I think are born with tea cup in hand) but those i get like once a year as well.
I dare say I love cookies about three times a year basically 🙂 🙂 🙂

I had a question about your future book Katie, will it include all the recipes that you have on your website (at least up to that moment of publishing)?
She’s mentioned before that the publisher wants primarily new content, so some recipes will be from the blog but most will not. I just can’t believe Katie has so many amazing recipes that she can keep posting on the blog AND be saving some for the cookbook! 🙂
I think I remember that Katie said that the book would be mostly new recipes. I’d buy the book even if it was only her blog recipes.
