What’s your favorite type of cookie?

My favorite is anything with chocolate or chocolate chips and no oven required.

I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.

In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients

The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.

Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.

You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.

Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies

Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.

Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.

Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

These healthy chocolate no bakes are vegan, gluten free, and easy to make with just 6 ingredients!

Ingredients

  • 1/4 cup cocoa powder (20g)
  • 2 cups quick oats (180g) (For keto, try these Fat Bombs)
  • 1/4 tsp salt
  • 1/2 cup peanut butter or allergy friendly sub (120g)
  • 1/2 cup pure maple syrup or honey
  • 1/4 cup coconut oil (48g)
  • optional 1/4 tsp pure vanilla extract
  • optional handful mini chocolate chips or shredded coconut

Instructions 

  • Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. I like to refrigerate or freeze leftovers, but they can also be left out in a cool place.

    I was wondering if you could recommend a brand of dairy-free chocolate chips? I typically use a Baker’s German Chocolate baking bar chopped up because I’ve heard from friends that the brand sold at our local store in their limited section is absolutely flavorless, hence not worth the $.

    Thanks so much for sharing your recipes. I have a 2 1/2 year old son who cannot have dairy or egg, so it is a real help to find desserts that the whole family will actually eat rather than having to make 2 separate batches each time!!

      I love Enjoy Life brand of chocolate chips and Whole Foods has their brand of vegan chocolate chips as well 🙂

      I don’t know if they have one in your area, but Trader Joe’s chocolate chips are dairy free, are reasonably priced and taste great!

        It is a bit of a drive, but there’s a town that has a Whole Foods & Trader Joe’s so I think next time I make my way in that direction I will pick up bags of each of the above kinds and then after sampling them I’ll know where to go back for more!! Thank you all!

      I just bought a bag of the Ghiradelli semis sweet and now it says “may contain milk”. Ugh, this was my go to choc chip because local stores had it. Guess ill have to head to Whole Foods for Enjoy Life chips.

        Just a note on the “may contain milk” (or any other “may contain” ingredients). Usually that means it’s simply made on the same equipment as products that contain milk. For example, with the chips, it’s possible that Ghirardelli makes their milk chocolate chips on the machines, then when done they clean the machines, and the next batch is the semi-sweet (which is dairy-free). Or perhaps they are manufactured on equipment that is near to something made with milk and it’s possible that could splash or somehow get into the mixture. Because there is a small possibility that a small trace of milk may be left behind after cleaning they have to list this. However, the ingredients of the chips themselves do not contain milk. It just depends on either your strictness to being vegan, or if you are severely lactose intolerant. Otherwise, the chips are dairy-free. For me, “may contain” items are ok since it means they are not primarily made with the ingredient I am trying to avoid. http://vegangstaz.wordpress.com/2011/02/22/what-does-may-contain-milk-mean/

      Wegmans chocolate-chips are dairy-free. My kids are gluten and dairy-free so I use those often – much cheaper than the Enjoy Life ones!

    My favorite has got to be our no bake cookie recipe! It melts together yummy peanut butter and delicious chocolate…sadly they r not exactly the healthiest. So excited to try these they look amazing!

      newbie here, I made these tonight subbing 1 TBSP cocnut oil+ 3 TBSP applesauce for the oil. I added in more oatflour and unsweetened coconut to dry it up a bit and used a cookie scoop to make cute little mounds that I pressed an almond into like someone else mentioned. Sooooo fudgy good! I also used dark cocoa, this is a keeper, thank you for sharing!
