What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
InstructionsÂ
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. Hi Katie! I’ve been reading your blog for a while now, but just recently went gluten free. I’ve been seriously craving some baked good action but I’m kind of scared to adjust my tried and true recipes to make them gf. These look too amazing to pass up, and I was wondering if you had suggestions to make them gf without losing their integrity. i.e. any particular flowers taste least gf? Also, how to make your lemon squares gf would never hurt either.

These cookies are gluten free, since they use oat flour. Just make sure to buy certified gluten free oat flour.

Hmm… the first thing that came to my mind when you asked about our favourite cookies, was my grandmother’s peanut butter cookies. She used to make raisin cookies for everyone, but I didn’t like raisins, so she made a special batch of peanut butter cookies just for me! That actually kind of makes me sad to think I’ll never get to try them again- sorry, I didn’t mean for that to be a downer… it’s really a happy memory!
Hmm, I’d say my favourite cookie is a Scandinavian Christmas no-bake cookie like thing called something very creative like ‘chocolate ball’. It’s essentially oats, butter, sugar, cocoa powder and milk, and most often rolled in coconut flakes. I have my own (slightly healthier version) that I’ll sometimes make, but I never bother to roll the dough into balls! This recipe is somewhat similar to mine, but I’ve never tried using any kind of flour.
I’m old-school too, and love me some chocolate-chip cookies. Like Tollhouse status. And I’m a HUGE snickerdoodle fan too – I have a theory that cinnamon makes everything taste better….
This is a tough one for substituting the oil but I tried with almond butter, milk, agave (instead of some sugar), and applesauce. The texture was pretty different and it didnt form into much of a cookie so I froze them and theyre great frozen treats! I think substituting half the oil would be more effective.
I also tried adding sprinkles and coconut extract with great results!
