What’s your favorite type of cookie?
My favorite is anything with chocolate or chocolate chips and no oven required.
I am one of those people who likes to eat the raw cookie dough (doesn’t everyone?) and impatiently watches the oven as cookies slowly bake.
In fact, I initially planned on baking these chocolate cookies… but the dough was entirely too good to wait that long!

Ingredients
The recipe calls for unsweetened cocoa powder, oats, peanut butter, pure maple syrup or honey, salt, coconut oil, and optional pure vanilla extract.
Add a handful of mini chocolate chips, chia seeds, or shredded coconut if desired.
You can use either rolled or quick oats. I love them both ways equally, and I’ve made these a lot! The version with rolled oats will have a chewier texture, so it just depends on your own personal preference.
Peanut butter may be swapped with almond butter, cashew butter, or sunflower butter.

How to make healthy chocolate no bake cookies
Gather your ingredients, along with a lined baking tray, large plate, or cookie sheet.
Warm the liquid ingredients until they are easily stir-able. You can even do this in a saucepan on the stove if you want to make the entire recipe in one pot.
Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on the lined plate and chill to set.

Ingredients
- 1/4 cup cocoa powder (20g)
- 2 cups quick oats (180g) (For keto, try these Fat Bombs)
- 1/4 tsp salt
- 1/2 cup peanut butter or allergy friendly sub (120g)
- 1/2 cup pure maple syrup or honey
- 1/4 cup coconut oil (48g)
- optional 1/4 tsp pure vanilla extract
- optional handful mini chocolate chips or shredded coconut
Instructions
- Warm the liquid ingredients until easily stir-able. (Feel free to do this in a pot on the stove if you want to make the entire recipe in one pot. Turn off the heat once liquid ingredients are softened.) Stir in remaining ingredients. Chill until firm enough to form into balls or cookie shapes with your hands or a cookie scoop, then place on a wax or parchment-lined plate and chill again to set. I love this mocha recipe. I was just think about coffee flavor while making your chocolate chip pancake recipe on Monday. For liquid of choice, what about some coffee? Anyways, made me wonder if you had ever tried that…or if you would consider coming up with other mocha related recipes!

Hi Katie .. I just made these and since I don’t like coffee, i subbed in 1 tsp on cinnamon for the coffee granules and they are so good. I loved this recipe because often a ‘no-bake’ cookie still involves stove top cooking so it was a nice change to have a raw cookie when it was too hot to turn the oven on! I only got 16 cookies but maybe mine are bigger.
oh, and.. chocolate chips are ‘optional’? .. Katie! Please! Chips are never, ever optional.
Ooh wow, I don’t actually know why I listed those as optional. I definitely didn’t mean that; for this recipe, I think the chips are important :). Fixed!
I can’t get choc chips in this part of the world, so could I omit those and beef up the cocoa part>???
Mine didn’t stay together very well and I followed the recipe exactly. But, you are right, these are like crack. The flavor is really good with the coffee. I will refrigerate these for a while and then try baking them.
I also wanted to add that I love when you use oats in your no bake recipes instead of nuts! Not that I don’t like nuts, but they are soo expensive! Oats are super cheap. Thanks! 🙂

I just made these cookies and put them in the fridge. I know already that they’ll be wonderful because I kept eating some of the dough :3
However, is there anyway to make these cookies so that the dough will be more “sticky”, if that makes sense? After adding all the ingredients and stirring, it was still a very powdery/oaty consistency, and I don’t think they’ll hold their shape once I shape them into balls. Is it possible to add more oil or water or something?
I actually had the opposite problem (slightly too much liquid)… are you sure you measured everything correctly? If so you could always add another 1 T of water (or oil, or brewed coffee!) at a time until it’s sticky enough to hold together.

I am soooo gonna make these! I am trying to lose my last few pretnancy pounds but it’s hard to control myself when i have my sweet cravings… These mocha delights will take care of my cravings 😉
I would have to say before going low-sugar my favourite cookie was a good old chocolate chip cookie with soft dough….my favourite now is a healthy double chocolate chip cookie I make with part whole wheat and part hazelnut meal. Cookies have to taste good, but my mind and body love it even more when it has fiber and protein.

Did you put the dough in a plastic bag and form the giant ball while inside the bag? Then chill?
