Homemade Oreo cookies?!
Ah, your eyes are playing tricks on you. What you really see is even better than an Oreo. These sandwich cookies look like Oreos, but they’re softer and chewier… imagine a cross between an Oreo and a candy bar.
That sounds fun, right?

No Bake Oreo Cookies
Makes 30-34 sandwich cookies
- 1 cup walnuts (see nutrition link below, for substitutions) (120g)
- 1 and 1/3 cup pitted dates (I highly recommend Sunmaid, which are softer) (200g)
- 1 tsp pure vanilla extract
- 1/8 tsp plus 1/16 tsp salt
- 3 tbsp regular cocoa powder (or Dutch-processed for more of a “cookie” taste)
- coconut butter or raw cashew butter (see nutrition link below, for substitutions)
- optional: sweetener of choice, if a sweeter filling is desired
Combine first 5 ingredients in a food processor, and process until the dates are completely broken up. (I used a Cuisinart. For best texture results, don’t use a blender.) Transfer the dough to a ziploc-type bag, seal, and smush it into one tight ball. Then roll out onto a sheet of wax or parchment paper, and use cookie cutters to make circles (or other shapes!). Fridge or freeze the circles for a few minutes, so they’re firmer and therefore easier to frost. Once firm, spread the filling on 1/2 the circles and then top with remaining circles.
These are best stored in the fridge or freezer, as coconut butter melts at room temperature. (P.S. coconut butter really doesn’t have a coconutty flavor, if you were worried about that. Its flavor is more like shortbread. However, feel free to use one of the other options if you’d prefer.)

I don’t like hard cookies, so I was never really big on Oreos. But I love the cookies ‘n cream flavor. Cookies ‘n cream ice cream, cookies ‘n cream cupcakes, cookies ‘n cream lip balm… yes, they do make such a thing!
Do you remember the game where two people twist the Oreo, and the person with the cream side will supposedly have good luck? In elementary school, I think we played that game every single day at lunch. It never got old.

Side note: As I wrote earlier, today’s recipe isn’t supposed to be an exact copycat for Oreos. I’m still working on that… I have the cookie part down, but I’m stuck for filling ideas since I’m trying not to use coconut butter or tofu (since so many people ask for substitutions when I make recipes with those ingredients. Y’all are a tough bunch to please! 😉















So I was a little hesitate at first that this would taste good…but WOW!! It tastes great. I am a but of a sugar addict and this was so good that I couldn’t stop. I have to admit I didn’t really care for the coconut butter and didn’t have any other butter to substitue but regardless I am enjoying just the ‘cookie’ part.
I never liked oreos, but since my fiancé does, I wanted to make him a healthier version. I put truwhip for the filling, and yum! Let’s hope he likes them as much as I do!

Sounds amazing, but do you have any suggestions for a substitute for the dates. We have fruit intolerances in this house so most fruits are off limits. Pineapple & coconut are ok. Maybe dried pineapple &/or coconut in place of the dates? Might there be a non-fruit alternative?

Thanks, but now I need a grain free & (mostly) fruit-free (pineapple & coconut are ok) version. We don’t to well with grains here, so I do try to avoid them.
I made these this weekend, and they are awesome! I didn’t bother cutting them out but just made a giant “slab” sandwich and cut them into squares. Still cute though! Thanks for this post!

I made delicious mistake whilst making these and resulted in ultra rich fudgey cookies instead ….mmmm.
I thought I’d halve the recipe because I didn’t have enough walnuts but I forgot to halve the amount of cocoa and vanilla, at first I didn’t realise but they tasted so sinful I thought I’d done something wrong!

My kids loved helping to make these! We used various cookie cutters that they picked out. I’m not sure these will last a day. The dough turned out really oily, but still really yummy! I probably over-processed it. I still rate these 5 stars because they are so good , even without the filling. We used almond butter.

Im an oreo addict and have been terribly missing em ever since I turned keto. I so badly wana try this out, but have a few doubts.
1. If I were to use granulated sweetener specifically erythritol instead of dates, how much would you recommend?
2. Can I just use my homemade no churn vanilla ice cream as the filling, or would that make the cookies soggy and wet?
3. Is the cocoa powder mentioned here for a oreo-kind of dark chocolate cookie? Im all for oreos but I still prefer a lighter chocolate version (if that makes sense)
