Homemade Oreo cookies?!
Ah, your eyes are playing tricks on you. What you really see is even better than an Oreo. These sandwich cookies look like Oreos, but they’re softer and chewier… imagine a cross between an Oreo and a candy bar.
That sounds fun, right?

No Bake Oreo Cookies
Makes 30-34 sandwich cookies
- 1 cup walnuts (see nutrition link below, for substitutions) (120g)
- 1 and 1/3 cup pitted dates (I highly recommend Sunmaid, which are softer) (200g)
- 1 tsp pure vanilla extract
- 1/8 tsp plus 1/16 tsp salt
- 3 tbsp regular cocoa powder (or Dutch-processed for more of a “cookie” taste)
- coconut butter or raw cashew butter (see nutrition link below, for substitutions)
- optional: sweetener of choice, if a sweeter filling is desired
Combine first 5 ingredients in a food processor, and process until the dates are completely broken up. (I used a Cuisinart. For best texture results, don’t use a blender.) Transfer the dough to a ziploc-type bag, seal, and smush it into one tight ball. Then roll out onto a sheet of wax or parchment paper, and use cookie cutters to make circles (or other shapes!). Fridge or freeze the circles for a few minutes, so they’re firmer and therefore easier to frost. Once firm, spread the filling on 1/2 the circles and then top with remaining circles.
These are best stored in the fridge or freezer, as coconut butter melts at room temperature. (P.S. coconut butter really doesn’t have a coconutty flavor, if you were worried about that. Its flavor is more like shortbread. However, feel free to use one of the other options if you’d prefer.)

I don’t like hard cookies, so I was never really big on Oreos. But I love the cookies ‘n cream flavor. Cookies ‘n cream ice cream, cookies ‘n cream cupcakes, cookies ‘n cream lip balm… yes, they do make such a thing!
Do you remember the game where two people twist the Oreo, and the person with the cream side will supposedly have good luck? In elementary school, I think we played that game every single day at lunch. It never got old.

Side note: As I wrote earlier, today’s recipe isn’t supposed to be an exact copycat for Oreos. I’m still working on that… I have the cookie part down, but I’m stuck for filling ideas since I’m trying not to use coconut butter or tofu (since so many people ask for substitutions when I make recipes with those ingredients. Y’all are a tough bunch to please! 😉

There’s actually no coconut oil in the “crust” — just the dates and walnuts when processed can be pressed into shapes! And the filling, which is separate, is coconut butter rather than oil. This post has a pic of the “dough” after processing:

Mine often looks drier than this, but it can still be smooshed together to form bars and the like.
Interesting – I know I’ve seen coconut oil in stores, but I’m not sure I’ve seen coconut butter I had assumed they were the same thing. I’m going to have to look for it the next time I’m out shopping. And it’s amazing that the dates and walnuts hold together like that…

I’m actually not Katie, but I’m sure she appreciates your comment. 🙂 The labels (especially for Artisana brand) look REALLY similar, and a lot of sites use the terms interchangeably, but coconut butter contains coconut meat, where the oil does not:

Looks awesome! Every so often I get a craving for Oreos and eat a ton of them 🙂 But maybe I will eat these next time instead!
ok, i’m assuming the “filling” is the coconut butter & sweetener mixed together? that’s the only 2 ingredients I don’t see mentioned (what to do with them) in the recipe.

Funny that you posted an Oreo recipe. I was wanting to ask if you’ve ever done a healthy version of “mud”‘or “dirt” which is a classic kids dessert made from vanilla pudding, cream cheese and crushed Oreos. It’s one of my all time fave desserts but I don’t make it any more for obvious reasons.
Ooh, that gave me an idea… The crust (fudge baby) portion always looks kind of like dirt to me when it comes out of the food processor… I’ll bet it’d be good just sprinkled over pudding or ice cream as-is!
It is. I do it all the time. It takes the “no bake” ease and goes one step lazier. 🙂

I was thinking of using my Fudge Daddies as the dirt layer. I’m still working on the “worms” part. I tried doing agar jello with straws, but it tasted pasty. Needs more work!
Thanks Katie! I actually could do without the worms; I was hoping for a yummy alternate to the pudding/cream cheese part. Maybe vanilla flavored coconut yogurt? They make a Greek style that’s pretty thick, creamy and delicious. Might go great with the fudge daddies.

Hmmm, you know that pudding cream part? I wonder if you could make a bavarian type cream with the agar base. ENTER KATIE, you should do this!:). I miss boston/bavarian cream sooo much!!
Ok this is gonna sound weird, but I thought they tasted like oreos! I didn’t think they would, so I made sure to use the Dutch cocoa to give them a better chance. I also added a little bit of stevia (nu naturals brand) to my coconut butter. The “cookie” part actually did remind me of an oreo, and the filling was even better than oreo filling! I think the only “un oreo” thing about them was the texture. Maybe if you had a dehydrator it would be even more oreo like?

Butter, coconut butter, lol. I doubt oil would work here since it’d need to be melted to use as filling and then it’d probably just soak in and make the crust oily (eew).
I made a batch of these tonight and am excited to try! The kids loved them. Was not clear on how much coconut butter to use though – especially since there were nutrition stats. I’m sure it was supposed to be a set amount…was I missing something?
No set amount… It just depends on how big you make your cookies and how thick you want the filling to be!
Right, as much as you want :). But as stated, the nutritional info is for 1/2 tsp filling per oreo. I didn’t really measure when I made mine. I just spread it on!
It was 9:30pm and Mattox (husband) asks me, what’s for dessert? Good question…I turned to Chocolate Covered Katie and wasn’t disappointed! I made these (half batch) and our lunches in 15 minutes. I didn’t add the nuts and used marshmallow creme for the filling and we both loved them! Thanks for the emergency dessert idea 🙂
