What are your favorite portable meals?
Sandwiches are one example of an easy and portable meal component, because they’re not too messy, and they don’t need to stay cold. But one can only eat so many plain-jane peanut butter sandwiches before it gets old. (Oh forget that; I could eat pb sandwiches every day for the next hundred years and not get sick of them.) One day last week, for the sake of variety—and because experimentation is so much fun—I strayed from the pb-sandwich road, with this:

Carrot Cake Sandwich
- Shredded carrot
- Raisins
- Crushed walnuts
- Cinnamon
- Cream cheese, such as Tofutti OR coconut butter or Cheesecake Mousse
- sweetener of choice, if desired
Close it all up in a whole wheat pita and you’re good to go.

Bonnie,
I reeeeaally wanted a gmail account… but it told me that chocolatecoveredkatie was taken! I signed up for one anyway (chocolatecoveredkatie1), but after trying it out for a day, I found the system of comments confusing… probably because I’ve gotten so used to the way hotmail does it. You can’t teach an old dog new tricks lol.
Mini muffins are ALWAYS good to have!!
Lauren,
I think I *might* know anyway 😕
But yeah, talk about creepy!
I gave you a Happy 101 Award! It was given to me, and now I am passing on the joy. Follow the link to my blog for all the details! http://tinyurl.com/yzw7vr7
Have a wonderful day 🙂 – Kim | http://www.affairsofliving.com
I love bagels for on the go!
We always make carrot cake oats, but never thought of a carrot cake sandwich. That will have to be something new to add to the list to try this week. On the go we eat cliff bars, egg spinach wrap, or a lean pocket.
I’m right there with ya–PB sammies forever would not be so bad in my opinion:)
yummy! looks like an indulgent carrot cake dessert yet its a healthy sandwich. love it! on the go i love trail mix, larabars, dried fruit, nuts, lots of fruit and soy lattes 🙂
Your carrot cake sammie looks so good! I bet it was even better than the pizza. 🙂
I like stuffing wheat tortillas with hummus and veggies for an on the go meal.
My favorite on the go fare is usually some homemade “larabars”… and now fudge babies have been added as well! I also am a huge fan of PB & honey and PB & banana w/ cinnamon sandwiches! I kinda like when the bread gets a bit soggy
Oh that looks so easy and awesome!
My fave sammich on the go is a salad pita– spinach, carrots, broccoli, hummus, pita. Yum!!! When I need less mess, I’ll go for the PB & naner combo.
I’m curious, do you have any problems going into a restaurant and bringing your own food??
Anything with nut butters or spreads in wraps is my favorite on the go food. Carrot cake sandwich – genius!
Hi Katie, havent said hi in a few posts so wanted to wish you a big fat TGIF baby!!!!!!!!!!! xoxo
I love sandwiches and wraps are my favorite kind! 🙂 I was wondering – what do you do to ‘cope’ or ‘deal’ with being vegan in restaurants etc? I mean, when it’s just my mom & I (both vegans) it’s great – we just pick veg friendly places…but say going out with friends and not being able to eat dessert…
The reason I ask is that sometimes I feel bad/ people have accused me of just doing it to ‘diet’ and it’s not that – I honestly just don’t eat animals…but I don’t want to go into a 3 hour schpiel on my lifestyle choices so…it’s confusing/ hard sometimes..
Big fan of cold soup on the go (yeah, it might sound unappetizing). Is the little man your brother?
I’m pretty sure I need to steal your carrot cake sammie idea. I’m always looking for something new to jazz up my lunches at school. I bet some crushed pineapple would go really well in it as well, or shredded coconut.
One of my fave “to go” meals is a bunch of things I can dip – like crackers, veggies, fruit, etc – and then take some kind of tasty dip – hummus, nut butter, whatever. It’s fun to play with your food!
THIS is what I’m talking about… yum yum yum Miss Katie! Love it already.
