Oh yes, Nutella blondies…

People are often surprised when they find out what type of music I like.
Perhaps this is due to my innocent demeanor or the fact that I am always wearing pink.
Or that I have the stereotypically “girly” job of baking for a living.
But the truth is you’d be much more likely to find me listening to hard rock or metal than Katy Perry or Beyoncé as I measure ingredients, stir batters, clean dishes, and pull batches of homemade chocolate chip blondies from the oven.

While wearing pink.

Nutella Chocolate Chip Blondies
Adapted from: Chocolate Chip Chickpea Blondies
- 1 1/2 cups chickpeas or white beans (1 can, drained and rinsed very well) (250g after draining)
- 3/4 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 2/3 cup granulated sugar of choice or xylitol
- pinch uncut stevia OR 2 additional tbsp sugar of choice
- 1/4 cup rolled oats
- 1/3 cup choc-hazelnut spread or Homemade Healthy Nutella
- 1/4 cup milk of choice
- 2 tsp pure vanilla extract
- 1/2 cup chocolate chips, plus extra for the top if desired
Grease an 8-in square baking pan, and set aside. Preheat oven to 350 degrees. In a high-quality food processor (taste and texture will be much better if a blender is not used), process all ingredients but the chips until smooth. Stir in the chips, then smooth into the baking pan, being sure to scoop out every last bit of the batter. Sprinkle some extra chips on the top if desired for presentation. Bake 30 minutes, then remove from the oven to cool. The Nutella blondies will look underdone at first, but this is okay. Once completely cool, cover the pan and refrigerate overnight. The texture will be much firmer the next day.

Katie, you are BEAUTIFUL! 🙂
And these blondies look so gooey and delicious it’s hard to believe they are so healthy! I am a big fan of your other blondies and I am also a big fan of nutella (isn’t everyone?!?) so I know I will love these too. Love the blog!
+1
These look delicious!! Congratulations on starting the guitar! I listen to a lot of different type of music, but I enjoy a mixture of Christian, danceable pop, soundtrack, instrumental and electronic. I guess that doesn’t really narrow it down… 🙁 I can totally imagine you baking to hard rock in pink! That’s awesome!
Gorgeous! Both you and the blondies
I’m a country girl to the bone…I have seen Sugarland in concert 5 times total. And congrats on learning guitar. I’ve been playing off and on for 15 years now and it’s magic!
Not surprised at all! You seem like such a multilayered individual that I can totally see you liking rock/metal music. You favoring pop music would be way too predictable! Although I enjoy what one would call top 40 songs, I’m an ’80s music girl at heart–Peter Cetera, Cyndi Lauper, Toto, Whitney Houston, they are the artists that feed my soul! Obsessed with Nutella and would literally eat it off a pickle so I am sure these are fabulous, can’t wait to try them!
LOL at the part about eating it off pickles!
These bars look amazing! I’m a big fan of your blog!
I love the guitar. Good for you for learning to play! I’m self taught on the guitar myself, it’s a huge passion of mine.
I love all kinds of music but I’d have to say that metal and hard rock are my favourites. I noticed you have a nylon classical. I would highly recommend checking out a group called rodrigo y gabriela. They’re hugh metal heads but they play nylon acoustic guitars. They’re really inspirational and so so good!
Thank you so much for the recommendation. I am going to google it now!
It definitely sounds kind of funny (not in a bad way; just different!) when I try to play my favorite rock/metal songs on the acoustic guitar. Then again, it also sounds kind of funny because I’ve only been playing for a week and am still terrible! My poor neighbors…
OMG yes I need these in my life.
Country music all the way =)
These look so delicious! I’ve never tried to make blondies before but seeing these is really tempting me! I haven’t baked in a long time so I may have to try making these.
Oh, and I really wish I could play the guitar too! I’m not musical enough for that haha!
Hey Kate I don’t seem to do well with Nutella do you think an almond butter would work instead? I can’t wait to try these. You’re so lucky to be able to eat all the food that you put on your website!!
I’m vegan, and Nutella is not. But I recently discovered Peanut Butter and Company’s stuff.. They make an AMAZING chocolate peanut butter that is vegan and HFCS free called dark chocolate dreams. and you can get it on Amazon.
