Normally, my goal is to make my healthy dessert recipes not taste healthy. However, these cookies are an exception to that rule. (In other words, don’t expect them to taste like traditional cookies you’d find in a bakery.) The wholesome breakfast cookies won’t be a hit with everyone, and I wouldn’t bring them to a party.
For that, I recommend my popular Flourless Chocolate Chip Cookies.
But if you’re used to the taste of healthy desserts—and maybe even if you’re not—these incredibly healthy oatmeal-raisin cookies might just be your newest-favorite cookies!

Oatmeal Raisin Breakfast Cookies

- 1/2 cup rolled oats
- scant 1/2 cup applesauce or over-ripe banana (mashed)
- 1/4 cup nut butter of choice (I used salted peanut butter)
- 1/4 tsp cinnamon
- 1/2 tsp pure vanilla extract
- 3 tbsp raisins (or other dried fruit, or even chocolate chips)
- 1/16 tsp salt, plus a tiny pinch more if desired (taste dough to decide)
- 1 packet stevia if using applesauce version (or 1 tablespoon sugar. I actually omitted this altogether. If you have absolutely no sweet tooth, you can try it that way. And if you have a huge sweet tooth—or are used to “non-healthy-tasting” desserts—try adding 1/4 cup sugar. As I said above, don’t expect these to taste like your everyday oatmeal-raisin cookies. I’ll post a recipe for those soon!)
Preheat the oven to 350 degrees. Mash the applesauce or banana with the nut butter, then add all other ingredients and mix until well-combined. Shape into cookies and bake for around 14 minutes. (Alternatively, you can try pulverizing the raisins and oats before combining them with the banana mixture, if you want more sweetness.) This recipe probably yields around 10-12 cookies, but I had to guess… because I ate a considerable amount of the raw dough!
Raisins: Do you love or hate them?
It seems like people have very strong feelings about raisins—either adoring them or loathing them! My roommate is on Team No-Raisins. Yesterday afternoon, as we were eating the cookies, she kept picking out the raisins and asking, “Couldn’t you have used chocolate chips instead?!” Hmmm, that’s actually not a bad idea. If there’s one thing I love more than raisins, it’s chocolate!

Made these yesterday for hubby and me. They were delish! And the recipe made just the right amount (8 cookies about 1.5″ in diameter). I sub’d the applesauce with banana, as suggested.

I love these and here is my favorite variation. So far. If you love the Kirkland brand Cashew Clusters from Costco you know there are a lot of nutty crumbs left at the bottom of the bag. I throw those in with the oats. Then add applesauce and cashew butter to go with it. I prefer chopped up dried apricots over raisins. Try it, you’ll like it!!
Thanks, Katie, for such a great recipe! I cannot count the number of times I have made it. And, surprisingly, it is THE requested snack at my son’s 4 year old preschool class. Even the kid that eats nothing but pretzels and Oreo cookies loves them. I have made multiple variations (applesauce/sunflower butter/mini chocolate chip, banana/peanut butter/raisin/extra cinnamon, banana/peanut butter/raisin/chocolate chip/extra cinnamon) and by FAR the favorite is the last – banana/peanut butter/raisin/chocolate chip/extra cinnamon. Can’t wait to cook my way through all your recipes.
The first time I made these I pretty much gobbled down the whole mixture and cooked cookies, and had to quickly donate some to my sister to help! So light, you can really get carried away.
Second time, I decided the mixture itself would make a good breakfast on its own. Protein (nut butter), & fibre and all so delicious!
Now I have decided to mix it up a little to use the mixture to make “energy bars” for after the gym. I usually have a banana and peanut butter (no added salt, oil, sugar kind) but I figured with that as the basis of this recipe I could add more goodness! I have now added dried cranberries, seasame seeds, sunflower seeds and pumpkin seeds. Protein ahoy! A zillion times better then those farm-yard smelling whey drinks !

what does scant mean in the recipe?
I actually used to not like raisins, but I love them now. Maybe it’s because I’m older!

These were delishhhh!!!! I was looking for a healthy breakfast cookie recipe and this was healthier than any breakfast cookie recipes I could find. The kids and I loved them!
I did like it uncooked. It was so much sweeter (without any added sugar). I tried it again today-raw and I believe the apple wasn’t as sweet, so it didn’t wow me like last night. But, it did save me from the need of cake or a not so healthy cookie binge. Thanks.

You’re website has been such a blessing! I have a huge sweet tooth/ love to make food for people but I feel yucky if I eat too many traditional goodies (or dough when I’m cooking- I mean who can resist?) but this website lets me cook for my dad and parents and eat as much as my tummy can handle! Can you leave the nut butter out? Does it affect its consistency? BTW, love your recipes! It’s the only way to have my family eat vegan and healthy desserts and snacks!
