If you’ve been reading this blog for a really long time, you might remember one of my most popular recipes, the Fudge Babies.

The original raw chocolate balls, fudge babies had no added sugar, no oil or heavy cream, and they tasted like pure chocolate bliss.

The recipe sparked hundreds of spin-offs from bloggers all over the world, with over 4,000 likes on facebook, and it was one of the three recipes I was asked to make during my guest appearance on USA Today.

There was only one problem with the fudge babies…

Like many other raw desserts, the base of the original raw chocolate fudge balls was raw nuts, such as walnuts or cashews.

This meant everyone allergic to nuts or who chose not to eat them couldn’t join in the fudge baby fun.

So finally, here is a chocolatey raw dessert that is 100% completely nut-free!

The pinch of salt gives these raw chocolate truffles surprising flavor depth, making up for the lack of fat in the recipe, and they’re pretty easy to whip up for a quick snack.

Note: If you’re looking for a more traditional truffle recipe instead of one with dates, here is my classic Chocolate Truffle Recipe.

Ingredients

  • 1 1/2 cups pitted dates
  • 1 1/2 tbsp cocoa or cacao powder
  • 1/8 tsp salt
  • small handful mini chocolate chips, optional
  • optional cocoa, shredded coconut, melted chocolate, etc.

Instructions

  • Combine the first three ingredients (and chips, if using) in a strong food processor or Vitamix, and blend until completely smooth. Scoop into a bowl, and freeze until the sticky dough is firm enough to roll balls (a half hour or so). Once balls are rolled—either with your hands or a mini cookie scoop—you can roll in the optional cocoa or coconut, or just eat them plain. I store leftover raw chocolate fudge balls in the freezer to keep them as firm as possible.

After removing the mixture from the blender I didn’t want to waste the mixture that was sticking to the goblet so blitzed some soya milk to make a delicious chocolate milkshake. Yummy bonus?.

Can you make these using melted cooking chocolate instead of the cocoa powder?

    1. Jason Sanford says:

You can definitely experiment and it sounds delicious. If you do try, be sure to report back here for others to know how it went!

  7. Tracey says:

Sounds delish! Question – Did you soak your dates before making the recipe, or just pit and grind ’em up?
    Thanks!

  8. Diana Johnson says:

Made these in the Vitamix and it was too dry/sticky to process. Do you have any suggestions on what we could add to make it easier to blend?

    1. Jason Sanford says:

Do you have a food processor? I’ve found that these work much better in a food processor. But if they are too dry, just add a little bit of water.

  9. Michelle Yorick says:

I would like to add protein to these… any advice on how much protein powder to add? And would I need to alter other ingredients to keep the consistency in check? Thanks so much!
