These healthy treats taste like eating peanut butter cookie dough!

(Above, chocolate peanut butter babies)
Peanut Butter Babies
(Makes 120 grams, which is a tiny bit more than the size of two Larabars)
- 1/4 cup roasted, salted peanuts (30g) (I use roasted-unsalted, and I add about 1/8 tsp plus 1/16th tsp salt.)
- scant 2/3c dates (80g) (I use SunMaid, because they’re super-soft.)
- 1/8 tsp pure vanilla extract
- Optional: chocolate chips or cocoa powder
Blend the ingredients in your food processor (I used a Magic Bullet short cup). Smush into bars, roll into balls, or use cookie cutters! These peanut butter fudge baby bars taste divine warmed up a little in the microwave.  Oh who am I kidding? They taste divine ANY way you choose to eat them.

Hi Katie, I just discovered your blog recently and tried these last night. I found I needed to add a couple drops of water to get everything to come together in my food processor, but maybe my dates were just extra dry… but nonetheless, thanks for sharing a great treat! My husband and I each ate half the recipe prior to our run, and it was a great little energy boost that even kept me satisfied for a little while after our workout. I think next time I will make German-chocolate-cake babies using pecans and toasted coconut flakes!
OMG! I just made these and they are fantastic! I’ve had them 3 days in a row now. Have you tried freezing them? The dates won’t ever actually freeze, they just get CHEWY and wonderful!!! I use Bahri dates since they are sweeter and softer than even Medjools. They make perfect babies. 🙂
I’m going to be trying to contribute to the Worldwide Vegan Bakesale in April and I’m thinking of making babies and selling those instead of baked goods. 🙂 Would you mind such a thing? I think you’re the creator and I’d hate to make money (even if it’s for charity) without your permission.
I’m not able to get to the official sale in MN due to doing my big art sale of the year (I crochet stuffed animals and cutesie stuff!) but I want to sell at my table on the day and donate the proceeds.

Is there any replacement for dates? Can you use something else or is it necessary to have?

Some people have told me they’ve had success with prunes, raisins, or even dried figs. If you try something, let me know what you tried and how it turned out :). One of these days, I’d really like to try dried figs in place of the dates!

i have been following your blog for awhile now and I love most of your recipes, but I have to say, these are BRILLIANT! We’ve (my kiddos and myself) have tried several variations (peanut butter, macaroon, hot cocoa) and love them! I was inspired to try them with nutella and that was yummy, too! I’ve been in a major dessert making mood lately and have been trying out quite a few of your recipes. I’ve been eating Blondie Cookie Dough by the spoonful all week! I just made a batch of babies and they are delish. I went for the chocolate peanut butter baby version and made them into balls. They definitely taste better than a Larabar! I see myself making many different versions of these. The nut to date ratio is perfect. I have a minor Larabar addiction so I’m thrilled to find this recipe.
