Peanut Butter Babies
(Makes 120 grams, which is a tiny bit more than the size of two Larabars)
- 1/4 cup roasted, salted peanuts (30g) (I use roasted-unsalted, and I add about 1/8 tsp plus 1/16th tsp salt.)
- scant 2/3c dates (80g) (I use SunMaid, because they’re super-soft.)
- 1/8 tsp pure vanilla extract
- Optional: chocolate chips or cocoa powder
Blend the ingredients in your food processor (I used a Magic Bullet short cup). Smush into bars, roll into balls, or use cookie cutters! These peanut butter fudge baby bars taste divine warmed up a little in the microwave.  Oh who am I kidding? They taste divine ANY way you choose to eat them.
Pb’s brothers and sisters:
- Add dried banana for Elvis Babies
- Dip in chocolate for Buckeye Babies
- Other dried fruit for Pb&J Babies
- Add chocolate chips or cocoa for Chocolate PB Babies

I actually just made these today and added in some oats for extra texture and they are ah-mazing!!! My fiance has been all over these, thanks!! Would looove to make these in a vita mix though…. 🙂
This ‘baby’ sounds the best to me! I would add chocolate chips . . . watch out Reeses!
I forgot to mention in my above comment that the first thing I would make would be THICK smoothies. I like to eat my smoothies with a spoon, but my current blender cannot handle that level of thickness, so I have to add more liquid than I would like.
these sound amaaaazing, i would make soup first!
I LOVE PEANUT BUTTER!!!!! oh and almond butter.. and my blender cannot make peanut butter OR almond butter! So i would make both if i got a vitamix! AHHH VITAMIXES ARE FABULOUS
Hey Katie! I love all things peanut butter so this sounds completely amazing! I would probably make a green smoothie first with a vita-mix because i tried it with my wimpy blender and there were a bunch of chunky pieces…bleh
I don’t know how I would decide what to make first in a VitaMix! Either kabocha soup, a nut butter or ice cream!
These sound delicious. Except I would make the chocolate chip mandatory instead of optional! 🙂 I can’t wait to try them all!
I would definitely make nut butters- every kind possible! Then I would eat it with chocolate. 🙂 Amazing giveaway!!
The first I would most definitely make my own almond butter with a vita mix!!!! I’ve always wanted to make my own nut butters, but I don’t have a blender to do so! 🙂
Yum! These sound amazing! I would love to get my hands on a vita mix to try these out. I’m also dying to make some great green monsters!
I would make these in the Vita Mix!! Along with smoothies and soups and loooots of other stuff!
I would first make a smoothie with my vita-mix!!
If I won a vitamix, this recipe would be the first I would make. The person who first thought to combine chocolate and peanut butter changed the world for the better. : )
these would DEF be the first thing I make in the vitamix!!
I would make banana soft serve! And real smoothies with leafy greens and no bits. And nut butters…the list goes on.
