These healthy treats taste like eating peanut butter cookie dough!

Peanut Butter Babies
(Makes 120 grams, which is a tiny bit more than the size of two Larabars)

  • 1/4 cup roasted, salted peanuts (30g) (I use roasted-unsalted, and I add about 1/8 tsp plus 1/16th tsp salt.)
  • scant 2/3c dates (80g) (I use SunMaid, because they’re super-soft.)
  • 1/8 tsp pure vanilla extract
  • Optional: chocolate chips or cocoa powder

Blend the ingredients in your food processor (I used a Magic Bullet short cup).  Smush into bars, roll into balls, or use cookie cutters!  These peanut butter fudge baby bars taste divine warmed up a little in the microwave.  Oh who am I kidding?  They taste divine ANY way you choose to eat them.

Pb’s brothers and sisters:

  1. Add dried banana for Elvis Babies
  2. Dip in chocolate for Buckeye Babies
  3. Other dried fruit for Pb&J Babies
  4. Add chocolate chips or cocoa for Chocolate PB Babies

    These are my favorite babies!

The first thing I’d make in my VitaMix is a nutrient-packed green smoothie – I’d pack that thing with all the veggies my regular blenders can’t handle, and let it whirl!

Thanks for the recipe, even better than a Lara Bar!!

The first thing I would make in the Vita Mix is some delicious chocolate covered strawberry ice cream. My wife and I have been drooling over this recipe but don’t have a blender quite powerful enough to pull it off.

Thanks for running this contest, best of luck to everyone!

These are my favorite babies! I love any chocolate + PB combo!

The first thing I’d make in my Vita Mix is homemade nut butter! And then soup, and shakes, any everything else imaginable!

  5. Chelsea says:

Yumm! The first thing I would make would be nut butters for sure! I only have a magic bullet and am too scared it will break if I try!!! Plus, definitely make some peanut butter babies!

  6. Amy says:

My first vita-mix creation would definitely be freshly ground peanut butter! I love my Maranatha as much as the next person but there’s nothing like homemade =)

  7. AB says:

A VITAMIX??!! Whoa! I would definitely make an exotic nut butter first! Maybe a pineapple-coconut macadamia nut butter or caramel-apple walnut butter — or better yet, white-chocolate pumpkin pecan butter. Yum!

  8. Samantha says:

If I won the vitamix the first thing I would make is hummus. I ate a lot of hummus every week and when I tried to make my own, I broke the blender 🙁 Of course the second thing I would make is peanut butter babies. yum!

  9. Jen says:

These are the best ones!! I add chocolate, of course!
