Peanut Butter Breakfast Pudding

One of my all time favorite breakfast recipes. It is so creamy and delicious! Recipe here: https://lett-trim.today/2012/02/01/peanut-butter-breakfast-pudding/

I’m going to be on television!!

The Dallas ABC affiliate news team is filming a story on me, for the 5 o’clock news! It’s pretty much the coolest thing to happen to me since… ever?!

For the feature, I’m thinking of either making the Deep Dish Cookie Pie or the Black Bean Brownies.

Right now I’m more excited than nervous, but that’s maybe just because it hasn’t really sunk in yet how many people are going to see this! Today’s agenda: figuring out what to wear, setting up dishes, and going on a cleaning spree. To power me through, I made a stand-by favorite breakfast:

oatmeal pudding

This isn’t your average bowl of peanut butter oats. The cooking method makes this breakfast taste like you are eating a giant bowl of gooey peanut butter pudding. It’s life-changing… at least as far as breakfast is concerned!

Peanut Butter Breakfast Pudding

Yield: Serves 1

Ingredients

  • 1/2 cup rolled oats
  • 1 cup milk of choice
  • 1/4 tsp salt
  • 1/2 a ripe banana
  • 1-2 tbsp peanut butter OR allergy-friendly alternative
  • 1/4 tsp pure vanilla extract
  • sweetener of choice, to taste
  • optional: chocolate chips

Instructions

Cook the oats, salt, and milk (either on the stove or in the microwave). Meanwhile, blend the pb and banana. Then add your vanilla, sweetener, and 1/2 of the cooked oats to the blender (I used a Magic Bullet) and re-blend. Stir in the rest of the oats. You can blend all the oats if you prefer, but I like the chewiness of leaving some un-blended.

Are you comfortable speaking in front of a group?
Or do you dread giving public presentations? Have you ever acted in a play or been on tv? I always loved giving class presentations and speeches in school, so I probably would’ve enjoyed acting. Unfortunately, I was too busy with soccer and tennis to join the drama club. As for the upcoming tv story, I am nervous about one thing (which might sound silly and superficial): what to wear. I’m clueless about fashion. Any tips?? Please send them my way!

Side note: I updated the Chocolate-Covered Katie Press Page.

This recipe was high on my list after finding your blog 2 weeks ago, and I finally tried it today now that my bananas are ripe. So incredibly yummy, and an instant mood lift to erase my frustrating afternoon! I wanted to try making it without a blender/food processor (mostly because I hate washing it, but also because I’m using it later to make more German Chocolate Fudge Bites!), and happily it turned out just fine. I melted the banana and mixed by spoon with the PB, and after the oatmeal was finished I just stirred everything together instead of blending. Not as much like pudding as yours, but still delicious (and fewer dishes, hehe). I halved the recipe and it was still a huge serving! 😀

YUM! I finally made this. What took me so long?? I used date honey to sweeten it and it turned out great!

The most important thing about dressing for TV is keeping it simple! Solid colors read much better than busy patterns and bright colors are always more flattering than tans or greys. (Yes, black is also always flattering, but colors make you pop!) Good luck!! 🙂

      Hehe — I know it’s easy to lose track (especially when you just find this site and start obsessively reading through recipe after recipe, as I did), but Katie was on TV almost two months ago. (c;

Katie, you are honestly a genius! I stumbled across your website last week and now I have to try all your recipes! It’s so incredible to find such delicious recipes that are healthy and easy. I just made this breakfast pudding this morning and can’t believe how delicious it is while still being good for me. Thanks so much for posting all of these recipes! You are really a gifted cook : )

      Aw Cindy, thank you!

This is delicious! I especially love the texture of the voluminous oatmeal. Have you ever tried sunflower butter? My fav combo currently is sunflower butter, melted bananas, cinnamon, and almond milk. Sometimes those sneaky chocolate chips jump in, too.

I think I tried it once a long time ago… I probably should try it again, because I don’t even rememeber what I thought about it!

Hi! absolutely love your blog, I’ve already tried some of your recipes, they are all soo great, but this peanut butter pudding is just perfect! I didn’t blen the oatmeal at all and add a bit of cinnamon, and it was just delicious and so easy to make, thanks for the idea!

I just made this for breakfast, it was so delicious! Very rich and filling, I may leave out my 1 tablespoon of honey next time. Thanks for the awesome energy-boosting breakfast!

I made this recipe last week and it was fantastic! It’s my new favourite breakfast dish! 🙂

  13. Mary says:

This sounds amazing! Will applesauce work instead of banana?? I know I won’t get the same flavor, but would it help with the consistency? Thank you!!
    P.S. I lovelovelove your blog!

    1. jess says:

Mary, if you try the applesauce, let me know how it works out! I can’t have bananas and that sounds like an awesome substitute!

  14. Nicole says:

    This was amazing!

  15. Lisa says:

Omg, I just made this with almond coconut milk and banana better n peanut butter. Amaze!!!! I would add chocolate chips but that’s going to start an all day chocolate affair which I can’t handle right now. I also took the other half of banana and “melted” it and mixed it in. Even better!!!

Thank you so much for coming up with such great recipes. I just made the pb oatmeal and…OMG…it is so yummy. I used 1 tablespoon Splenda brown sugar, organic powdered peanut butter and then a small handful of vegan carob chips. I am in the process of making a change in my food lifestyle and your website is definitely a big help! Thank you!
